So thankful to have @notonlyjuice right up the street from my office! 🙌🏻 I almost always pack my own lunch...but sometimes life gets crazy and I’m lucky that I got dressed in the morning 🤷🏼♀️On those days, I’ll often stop in here to grab a quick lunch to-go. Their cafe has SO MANY gluten free, vegan, and vegetarian options. They are Northeastern CT’s only cold-pressed juicery, but clearly they’ve got a lot more goin on! Today I got the special, which was a balsamic eggplant sandwich with a side of kale salad made with kale, quinoa, dried cherries, scallions, dill, feta, and Dijon vinaigrette 🍆🥗 It’s worth a trip!
My meals tend to look like puke which is why I don’t post many pictures. Today has been crazy already. It’s 11:30 and I’ve had 3 meetings, and have 4 more to go! This lunch took me 5 minutes start to finish. Tossed oil in a pan with some garlic. Added a bunch of random frozen veggies from @traderjoes. Threw them on a plate. Scrambled two eggs. Added some avocado on top and a scoop of fresh salsa. It’s #healthy . It’s #clean . It’s #nutrientdense . It’s #glutenfree . It’s #paleo . It’s #whole30 . And it will boost my immune system so I don’t catch anything on my flight Sunday. Oh and it probably cost me about a dollar. #holla PS all that dark green is spinach. Not sure why it looks so funky.
We’re still on our Virginia spring break trip and staying with my sister-in-law who is a baking queen. Someone at @foodnetwork should give her her own show for reals. She and my daughter tried their hands at macarons from scratch last night. From scratch.

I THINK I HAVE THE BEST BOYFRIEND EVER LADIES. This afternoon I did terrible on an exam and I told Jared I wish that he were here to cook me sweet potato fries and a burger on a bed of lettuce with bacon, avocado and a fried egg. When I got out of yoga this evening I had a text on my phone from him telling me to go pick up my burger from the counter since he couldn’t be here to make me one 😭😭😭 now I’m eating my burger with bacon, avo and a fried egg and my sweet potato fries feeling like the lucking girl in the world. 🍔 🥑 🥓 🍳 #longdistancerelationshipthings#celiacfriendly#burgerwithafriedegg#sweetpotfries#thisislove

Even though it doesn’t feel like Spring☀️🌷out I was craving a spring time dish! Pasta Primavera🍴Fettuccine with asparagus, onions, bell peppers, broccoli 🥦, peas, tomatoes 🍅, spinach and garlic in a lemony 🍋 olive oil sauce!
This is how I BASEBALL! ⚾️⚾️Going to baseball games has become my favorite activity in Oakland. Tickets are cheap, the sun is usually shining and I can bring my own nutrient packed meals while socializing and feeling somewhat normal. .
Socializing with peers can be TOUGH for me. Always saying no to offers of food/drink plus explaining what is in my tupperware takes a toll on my mental health. Every time I eat with a new person, the meal is dominated by conversation about celiac, AIP and my health journey, which I find v. exhausting. ⚾️
Through the support of my partner, friends and family it is getting easier to confidently eat greens in public while everyone else is eating french fries, but it never feels good to be the odd one out. .
Every time I’m with friends and feeling like the only veggie nerd in the stadium, I remind myself that just two years ago I barely left the house because my stomach pain and nausea were so severe. Who cares about what I packed for lunch— I am a functioning HUMAN again!
It is ALWAYS worth it to lug containers of food. It is ALWAYS worth it to say No to food that will throw me off my path. And it is ALWAYS worth it to put my health first. 💪 .

About last night's dinner...I made Pistachio Crusted Cod with Tahini Zucchini Noodles...I only wish I had made enough for leftovers because it was so good.😋
2 cod loins, thawed
1 large egg
½ cup unshelled pistachios
2 large zucchinis, spiralized
¼ cup tahini
1 tbsp. lemon juice
1 tsp. coconut aminos
3 tbsp. water
1 tsp. dried tarragon leaves
How to Make It 1 Preheat the oven to 350 F. Prepare a glass baking dish and set aside. 2 In a bowl, whisk together the egg with 1 tablespoon of water. 3 Place pistachios in a blender and pulse several times until roughly chopped and small enough to make a crust. Transfer pistachios to a plate. 4 Dip a cod loin into the egg wash then immediately into the pistachio mixture coating only the front of the cod. Place the cod on the glass baking dish. Repeat for the other cod loin. 5 Bake at 350 F for 30 minutes or until flaky. 6 While the cod bakes, make the tahini sauce by whisking the tahini, lemon juice, water, coconut aminos and tarragon leaves together in a ramekin. Set aside. 7 Bring a small skillet to medium heat with a little coconut oil and place spiralized zucchini in it. Cook 3-5 minutes until zucchini is tender. 8 Transfer zucchini to a plate, top with tahini sauce and pistachio baked cod.
Happy Wednesday everyone!! Being a nursing student, I do not have a lot of time some days to make elaborate meals. Sometimes a quick smoothie bowl is the easier way to go!
-1 organic açaí packet -1 banana
-50 grams raspberry
-95 grams strawberry
-2 oz blueberry
-1/4 cup unsweetened almond milk
-1/2 TBP hemp seeds -1 TBP almond chips -coconut shavings
-dark chocolate pieces
1. Blend 1/2 banana, strawberry, raspberry, blueberry and açaí packet with the almond milk
2. Pour into a bowl and add slices of banana, almond chips, chocolate chips, and hemp seeds and enjoy !!
