Why did I decide to self-publish?⠀
.⠀
FIRST - I couldn’t get a publisher to get behind my vision. Either they weren’t interested in talking to me because AIP was too “niche,” they wanted me to adjust to be a Paleo cookbook, or they wanted it to contain less photos and be paperback.⠀
.⠀
NEXT - I was not willing to compromise. After doing AIP myself, I realized the steep learning curve for beginners. People in the market for an AIP cookbook were not looking for something to sit on their shelf to casually open a few times a month. They were going to be following the meal plans and cooking from it many times a week, sometimes every day!⠀
.⠀
LAST - I thought the AIP community deserved a book not only full of recipes they could eat, but one with food an imagery beautiful enough to get their non-AIP friends and family on board. I wanted to create something that felt like a special gift to a community that was feeling lost and alone.⠀
.⠀
Talking to publishers and ultimately turning them down helped me clarify this vision. I wanted to create a high-quality hardcover book that would easily lay open on the countertop and handle lots of abuse.⠀

I didn’t know what I was getting myself into when I made the decision. I didn’t have any experience, and I certainly didn’t have the cash upfront. Deep down I knew it was right, so I got to researching, learning, asking lots of questions, making mistakes and fixing them.⠀

I took the photo above when I was in the color proof stage so my printer could get to work producing the book by my deadline. Special thanks to @starprintbrokers who walked me through this process step-by-step, answering question after question and assuring me everything would work out alright.⠀

Ayurveda is the sister science of Yoga. Ayurveda quite literally means the knowledge of life. Knowing the principles of ayurveda is like having an instruction manual for the body, mind and spirit.

While ayurveda is a vast and deep ocean of wisdom, knowing even the tiniest sliver of its philosophy can give you a whole new understanding of yourself and your relationship with the world around you.

In this workshop, we will be discussing the basics of Ayurveda: the 5 elements (space, air, fire, water, earth), 3 types of Prana (Soma, Agni, Marut), 3 Doshas (Vata, Pitta, Kapha), the 5 tastes (sweet, sour, salty, bitter, pungent, astringent), plus bits about diet, cooking and easy daily routines that allow us to follow the laws of nature and that have a profound impact on overall balanced health.

After quite the life-changing journey over the past 6+ years, I am expanding AmritAyurveda so that I can provide the space and guidance for a local community to blossom. A space where everyone can learn and grow together while inspiring one another to live the life that aligns with each individual’s own unique nature while dancing beautifully with the laws of nature.

When I was blogging to share my GF resources after having been diagnosed with Celiac to help others avoid incidental gluten cross-contact, I was constantly asked: “What do you eat throughout the day?” and “what are your lifestyle routines?” So many people living with Celiac and GI distress longed to have a script to my life while hoping to find something that brought them relief, that provided them more insight or answers. However, my reply was always, “Once I find out what works, I will share it.” Even though I was living a GF lifestyle while avoiding gluten exposures, I still hadn’t found the diet & lifestyle that nourished my being and that reaped that harmonious life that I knew was possible. Ultimate, at that time, I knew that I could feel so much better, way better!

I found those answers I was looking for - I found what works. However, instead of sharing my findings immediately, I committed to studying it formally for many years.

Well, I am excited to share that I have finally created the space, as I am still homeschooling my girls and studying Ayurveda more deeply, to share all that I have learned and all that I practice with all of you, so please join me! (See next post. Link is also ☝🏼)

Bread was light fluffy and not Genius (anyone else get a buzz on when they realise it isn't 🙈) and cooked in a separate area DREAMY. I hadn't tried avo and cheese before and it was bloody lovely. Good morning ketoians! My house has run over with a tummy bug and here I am...not catching it. My immune system has been pathetic for the last 7 years no matter what I did or ate. I've contributed it to a combo of #celiac and just the damage done with the infection that put me here. But not today Satan! I'm so amazed at what this way of eating is doing for me I feel like a teenager at a boy band concert. While I've just hit my 30 day marker and have more healing and adapting time I'm already starting to recognize how my body thrives on #keto One way that is different than most people on keto...breakfast. This may change but for now breakfast is a must. I found when I was trying to draw out my fast until 10 am I would wake up with high fasting glucose levels. However when I began getting even a small brekkie in, that dropped significantly. On the flip side I don't need to eat again until dinner. This is through my busy work day, workouts and everything. I have sustained energy up until dinner. So this is my keto. A facebookon folyamatosan osztom a gluténmentes ⛔️recepteket (no meg az észt), aztán meg sorra jönnek a kérések, hogy ezt meg azt el lehet-e a céllisztjeimből készíteni tojásmentesen, tejmentesen.....Hát pont az a típus vagyok, aki imádja a kihívásokat, és természetesen óriási öröm számomra, ha sikerül olyan receptet kikísérleteznem, ami többféle diétás étrendbe is beilleszthető, és még finom is. Tudjátok vezettem 2,5 éven át mentes éttermet is, és a világ 🌍 minden tájáról érkező vendégek szinte maradéktalanul azt kérdezték tőlem, hogy jó-jó mentes, de hogy csinálom, hogy még finom is?!
Azt gondolom, nem elég csak helyettesíteni alapanyagokat. Igaz gyümölcsökkel, meg krémekkel szinte mindent elfogadhatóvá lehet tenni, de szerintem az nem az igazi.
Éppen ma sült ez a piskóta 🍰...no itt kezdődik a bibi, a megfogalmazásnál, mert a piskóta az felvert tojásból, lisztből és cukorból készül, így nem nevezhetném ennek, de mivel úgyis mindenki így keres majd rá, ez lesz ennek is a neve...valami kiegészítéssel.....vagy csak azért is más.....
Lényeg, hogy #gluténmentes#tojásmentes#tejmentes (azért kiemelendő, mert sok esetben tejföllel is pótolják a tojáshiányt) #piskóta , azaz #torta lap, amit a videón🎥 látsz. Nem használtam hozzá semmilyen tojáspótlót sem, mert a Hadarik Rita piskóta céllisztben már minden szárazanyag benne van, még egy ilyen speciális #süti alaphoz is.
A recept hamarosan felkerül a márkaoldalra, addig is, ha felcsillant a szemed, a boiban átkattinthatsz, és csemegézhetsz a korábbi sok-sok recept között.

Testing testing 💉
Gluten week continues 😫 Have spent the last few days in a permanent state of nausea, bloatedness, headaches, stiffness and cramps. In a weird way, it’s reassuring that I wasn’t being melodramatic before. The reaction is stark. I’ve also noticed heart palpitations, burning feeling in the abdomen, fatigue and brain fog.

The blood test is Thursday morning (among other things), but also am doing fructose, lactose, acid profile and adrenals ... plus whatever is in the blood test (I don’t have the full list for that).
.
Feels good to be on the journey finally, but it will be a long one, I suspect ... but hope not!
.
Two more days left - then most likely no more gluten ever again. I must confess, that I am thinking a bit of ‘hmmm well if I’m gonna feel sick, I may as well make it worth it..’

if you ever wondered why people with celiac disease are so paranoid about their food being gluten free, this is why👏
the right is how i look normally and the left is how i looked after i ate something at a restaurant that had been contaminated by gluten (the bloat is an immediate reaction and lasts about 18-24 hrs)
i have met a lot of ppl who ask me why i am so insistent that the food i order/eat is
1) gluten free and
2) not made with/near kitchen tools that have also been used to cook meals with wheat
my celiac disease is so severe that i’ll have a reaction if i eat a meal that is made with the same kitchen supplies that are used for wheat-containing meals

a contamination reaction is less extreme than if i eat gluten directly: my stomach becomes painfully bloated for up to 48 hrs, i am too nauseous to eat anything for at least a day, i suffer from pain and digestion discomfort for about 8-10 hours and i'll experience extreme exhaustion, mild rash, headaches and achy joints
if i eat something that has gluten in it: the pain is so extreme that i am unable to leave my bed, it feels like i have glass in my intestines, i break out in a rash all over my body, the nausea lasts for days, the migraines are so excruciating that my vision is impaired, then there’s extreme exhaustion, depression, chills, body soreness and the digestion issues can last weeks. sometimes i will lose weight because i am unable to eat and my body is in a state of distress. i usually need to miss work/school to recover

i understand that with the gluten free trend being so popular right now, it can be v annoying to deal with. i have been disregarded by waiters and shamed by “friends” bc they don’t understand celiac disease
so if you're out with someone who needs to make a special dietary request, pls be supportive and understand that this is not to be "extra", it's bc of our health❤️

fun fact: sour patch kids are gluten free and vegan like who knew?? (i been knew bc i’m addicted to sour candy) it’s crazy how many ppl think that i have a low-carb diet or only eat fruit bc of my dietary allergies/restrictions? it’s possible to still have treats and fun food with (many) dietary restrictions!! just do your research and double check the ingredients but you can almost always find an option so you don’t feel so limited by your allergies/dietary preferences✌️

@canpanedes es un restaurante que encontramos en la Llagostera, un pueblo cerca de #girona . Con una renovada y cuidada decoración, uno de los restaurantes de referencia para los amantes de caracoles. Pero para los que preferimos otro tipo de manjar, decir que la cocina es de mercado, típica catalana. Tienen opciones para #celíacos y la calidad del producto es muy buena. Sin embargo para mejorar el servicio les recomendaría disponer de pan #singluten , ya que cuando fui no tenían. También tener en cuenta que si algún plato lleva una salsa con #gluten es necesario avisar. Pues en mi caso, como podéis, ver hice dos fotos del bacalao con verduras, la primera llevaba una salsa de romesco ( que a priori no debe llevar gluten, pero que al preguntar a la camarera dijo que sí llevaba, que por eso la ponían en un vol a parte, pero servida dentro del plato) y la segunda foto es con all i oli, pues pedí que me retiraran la salsa. Este hecho que parece tonto, cuando tratamos con celíacos o cualquier otra alergia o intolerancia puede acabar en un final fatídico para el comensal.Es necesario avisar al chef, y evidentemente que el plato se sirva sin el alimento del que la persona tiene alergia o intolerancia. Con un poco más de cuidado y conciencia este restaurante puede ser una opción muy buena tanto para celíacos como para no celíacos.

Peanut butter powder is my new obsession 🥜 It’s perfect for smoothies and all you do is add water to make creamy PB! It’s also less fat and calories but I’m honestly not worried about those things right now with #intuitiveeating 💛 I successfully passed avocado testing last week but with stress and traveling I had a big flare up this past weekend so this week I’m giving body a break before I start the next challenge. I also have recently started doing yoga in the morning and not only is it great for my mental clarity, I also think it helps keep my tummy happy! Thanks to YouTube I can try new things from the comfort of my living room 😌

It’s CRAZY to think that 4 short years ago I signed up as a coach, not knowing what the hell I was doing. I was sick from my autoimmune disease, loaded on medications and miserable AF. I hated my job and I was broke as a j o k e . I had gained weight from emotional eating and depression, and I KNEW I needed a kick in the ass to get myself on the right track.

When I first joined, it was for the accountability and support. Then I got my first paycheck (after putting in the work - it doesn’t show up by sitting around!) and realized this could really be a thing. I could really make a living from being healthy, losing weight, and working out. .
The support and community were so freaking incredible, I knew I wanted MORE. I wanted to go on the free vacations I saw other coaches earning and I wanted a life of freedom for myself and my future family. I wanted to say I built an empowering community for driven women like me with my team by my side.

Now I own TWO businesses, I’m on my way to financial freedom, medication free, and I’m so freaking joyful. I feel so empowered and happy with who I have become. For the first time in my life, I know what my purpose is (helping people start on their own wellness/coaching journey), and I have a team of people standing behind me who want the same things for themselves! I couldn’t have done this without the support of our team.

Had a major dad fail yesterday...I took Jadyn and Hope with me to start my run. Jadyn didn’t want to go past 1.5 miles or so. I took him back to the house and left Hope with him and I kept going. She was not happy with me for that. She wouldn’t look at me for 2 hrs. I feel so bad for upsetting her like that. I did check on her before I left this morning for work because she wasn’t feeling good either. She whispered “I love you daddy!” As I gave her a kiss.
