Had a really good day yesterday. Been trying to eat more healthy and despite my ankle issues been going to the gym to at least work on other areas. Yesterday my physical therapist cleared me to start working out my lower body again and I'm going to slowly transition to getting back into shape (yay!!!!!) Working out my legs yesterday felt amazing, and then I came home and made this bomb ass cauliflower fried rice. Super yummy. Also looking into getting a personal trainer while I ease into the leg work ^_^ #healthy #yummy #cauliflowerrice #fitness #gym #recovery #fitnessjourney

🥓 See, I don't meal plan or meal prep, because just the thought of it gives me anxiety. However, I do have a rotation list of meals I have made and we liked as a family. When I go grocery shopping, I look at what I already have and then on this list and make a mental note of a few meals I want to make during the week and then make the shopping list. Then I randomly decide what I want to make based on where I am with my day - the kids, work, schedules, how I feel, etc. Any more planning than that, and I give up in an anxiety attack. Am I the only weirdo like this?

Cauliflower Fried Rice

1 serving
Total Time 31 Min. 
Cook Time 16 min
Non stick spray
2 cloves garlic
1 green onion 
1 (12 oz) fresh or 4 C frozen cauliflower riced
1/2 C chopped or shredded carrots 
1 egg lightly beaten
1-2 tsp sesame oil
1-2 tsp. Reduced sodium soy sauce

1. Large nonstick skillet, lightly coated with spray, over medium heat
2. And garlic and half of the green onion; cook, stirring frequently, for one minute
3. And cauliflower and carrots; cook, stirring frequently, for 4 to 6 minutes, or until cauliflower is tender crisp. Reduce heat to medium low
4. Make a well in center of cauliflower mixture. Add egg; cook, stirring frequently to scramble egg into cauliflower mixture, for 2 to 3 minutes, or until egg starts to set.
5. And oil and soy sauce; cook, stirring Frequently, for 2 to 3 minutes, or until well mixed and heated through.

#Lunch today for three (Savvy had hers packed in her lunchbox).. I whipped up the mixture for these Cauliflower fritters last night whilst prepping dinner. I quickly fried up just enough for Savanna's lunchbox last night but slightly burnt them.. then today I used the same mixture but baked them in the oven. They turned out SO much better than the fried version. .

These are so simple... this is the rough recipe as I didn't measure: .
- 1.5 cups cooked Cauliflower Rice
- 1/4 cup corn kernels - handful of baby spinach chopped finely
- 1 cup grated organic cheese
- 2 TBS GF oat flour (I use @gfoats and grind into a fine flour)
- salt & pepper to taste

Mix all ingredients together then place portions onto a baking tray, press down and shape into rounds.

Bake on 200 degrees Celsius on the bottom shelf (this makes them extra crispy) for about 8-10 mins on each side. .
.
TIP: next time I make them I will add 2 eggs (I didn't have any last night). The eggs will help to bind them.

Serve up with HEAPS of steamed greens dressed in coconut aminos, this combo was SO good! .

Fried Cauliflower rice 🌱🍚 Yes this is all oilfree ❤️ First I scored the the Shitake and let them boil in a little water. Then fried them until browned. After that I added soy sauce to the pan and cooked until soy sauce boiled down. Set aside🍄

For the cauliflower rice I just chopped up the cauliflower head really finely. A lot of people use a food processor or blender for this (which makes less of a mess but I couldn't be bothered to get it out😁). Throw it in a bowl with other veggies of choice. I used green beans, Chinese broccoli stems and red cabbage.

Sautee an onion in a little water. Then add what you prepared in the bowl and some sambal oelek. Fry it! Then add a little soy sauce and let it boil down. Add pepper. I also added some seaweeds flakes.

As there is usually egg in fried rice I used an egg replacement I still had lying around. I mixed it with a little soy milk and then added it to to the pan. Turned it up to high heat and fried a little longer. Then turn of the heat and add kale and Chinese broccoli leaves and mixed them in order for them to wilt. 
Top everything with cut up shitake, chives and sesame seeds 😍

The top is a “mini” adobo fried rice omelette. (Can you imagine how big a regular size is?). I ended up eating about half and the next day I went up in weight.

The bottom looks like fried rice but it’s caulisotto (risotto made from cauliflower rice). The serving size is the whole bag! (It’s the pre-made frozen kind that you can steam in the bag in the microwave.) I ate it all, including the serving of costco rotisserie chicken, and I was completely full and the next day was a weight loss day. 
Healthy choices = MORE food.
