Had a really good day yesterday. Been trying to eat more healthy and despite my ankle issues been going to the gym to at least work on other areas. Yesterday my physical therapist cleared me to start working out my lower body again and I'm going to slowly transition to getting back into shape (yay!!!!!) Working out my legs yesterday felt amazing, and then I came home and made this bomb ass cauliflower fried rice. Super yummy. Also looking into getting a personal trainer while I ease into the leg work ^_^ #healthy#yummy#cauliflowerrice#fitness#gym#recovery#fitnessjourney
Don't judge me for making this again. It's quick, easy, my family loves it and super low carb. Anytime my homemade guac is in play, my family is down for that.
🥓 See, I don't meal plan or meal prep, because just the thought of it gives me anxiety. However, I do have a rotation list of meals I have made and we liked as a family. When I go grocery shopping, I look at what I already have and then on this list and make a mental note of a few meals I want to make during the week and then make the shopping list. Then I randomly decide what I want to make based on where I am with my day - the kids, work, schedules, how I feel, etc. Any more planning than that, and I give up in an anxiety attack. Am I the only weirdo like this?
One of my favorite go to meals during the week is this ground turkey burrito bowl with cilantro lime cauliflower rice, black beans and bell peppers. It’s a quick meal to make and I’ve found that because I’ve swapped the rice with cauliflower instead, my blood sugars don’t go crazy after this meal.
Anyone else try using cauliflower rice as a replacement in their meals?
HOW TO MAKE CAULIFLOWER RICE ?? 😍✨
Sorry for the shitty quality but the important is how do do it right ?! Ahaha .
1️⃣ Rinse your cauliflower (using white vinegar personally) .
2️⃣ Cut it (the smallest the pieces are, the easiest it will be to blend) .
3️⃣ Blend it (do it step by step, do not put the entire cauliflower in your blender 😂)
4️⃣ Watch the magic happen 🤗😝
‼️warning : your entire kitchen will smell the cauliflower 😅😂‼️ .

Ok, I LOVED this meal last night!!!
Not only was it tasty and healthy, but I was able to adapt it to everyone in the family really easily. .
🌶 Tom and I ate the stuffed peppers pictured. .
🌶 Riley doesn’t like peppers, so she just ate the meat with a little melted cheese on top. Fine with me, since the hamburger meat was made with a 16oz bag of cauliflower rice and a can of diced tomatoes. The peppers were just extra credit veggies. .
🌶 Eric doesn’t like peppers (or any veggie) either, but he’s a sandwich kind of kid, so I put the meat mixture on a hamburger bun with cheese for him. He had two, and never realized he ate a vegetable!!!!
Let me know if you want the recipe!!!
#Chiaseeds in almond milk is what’s for breakfast. Side note: I also added 1/2 scoop of #slimfast advanced protein to this and I swear it was better than ice cream. Ate half now then the other half after we install the kitchen cabinets today! Happy Thursday people!
I really love to cook, but often my varied schedule doesn’t allow me to make fresh meals every night (meaning not pre-cooked and refrigerated) , so when I get the chance to cook I want it to be quick (preferably) and yummy (positively).
Greg and I enjoyed dinner on our deck last night and the recipe is below, just add your own protein to make it a whole meal.
Another fabulous healthy recipe! This one comes from the new 2B mindset program I’m coaching. Double it for two people!!!! I added wild caught shrimp to mine for dinner last night, this was so easy and delicious! 💕
I’m setting up my June Success Group for this program and there are still 5 spots open (keeping it small for personal coaching), if you need to make a change in your nutrition but are DONE with diets, I encourage you to reach out, let’s work together and get you off the weight loss yo-yo. 💕

🥦cauliflowers fried rice > grated cauliflower instead of rice(no rice at all), carrot, mushroom, onion, soy sauce

Flavoured with stock hence why darker in colour. 🙋🏼♀️and topped with sesame egg, avocado and fresh lemon squeeze 🤙🏼 SUPER quick and easy, and cleaned up the left over veg in the fridge! 💁🏼♀️ I’ll have to write down the recipe next time 😂#healthymadesimple
#Lunch today for three (Savvy had hers packed in her lunchbox).. I whipped up the mixture for these Cauliflower fritters last night whilst prepping dinner. I quickly fried up just enough for Savanna's lunchbox last night but slightly burnt them.. then today I used the same mixture but baked them in the oven. They turned out SO much better than the fried version. .
These are so simple... this is the rough recipe as I didn't measure: .
- 1.5 cups cooked Cauliflower Rice
- 1/4 cup corn kernels - handful of baby spinach chopped finely
- 1 cup grated organic cheese
- 2 TBS GF oat flour (I use @gfoats and grind into a fine flour)
- salt & pepper to taste
Mix all ingredients together then place portions onto a baking tray, press down and shape into rounds.
Bake on 200 degrees Celsius on the bottom shelf (this makes them extra crispy) for about 8-10 mins on each side. .
TIP: next time I make them I will add 2 eggs (I didn't have any last night). The eggs will help to bind them.
Serve up with HEAPS of steamed greens dressed in coconut aminos, this combo was SO good! .
Fried Cauliflower rice 🌱🍚 Yes this is all oilfree ❤️ First I scored the the Shitake and let them boil in a little water. Then fried them until browned. After that I added soy sauce to the pan and cooked until soy sauce boiled down. Set aside🍄
For the cauliflower rice I just chopped up the cauliflower head really finely. A lot of people use a food processor or blender for this (which makes less of a mess but I couldn't be bothered to get it out😁). Throw it in a bowl with other veggies of choice. I used green beans, Chinese broccoli stems and red cabbage.
Sautee an onion in a little water. Then add what you prepared in the bowl and some sambal oelek. Fry it! Then add a little soy sauce and let it boil down. Add pepper. I also added some seaweeds flakes.
As there is usually egg in fried rice I used an egg replacement I still had lying around. I mixed it with a little soy milk and then added it to to the pan. Turned it up to high heat and fried a little longer. Then turn of the heat and add kale and Chinese broccoli leaves and mixed them in order for them to wilt.
Top everything with cut up shitake, chives and sesame seeds 😍
Cauliflower porridge 💫
Yes you read that right!! I wanted something low carb but filling and tasty so I took inspo from @fullgreen.official and made this! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
It was actually so tasty, plus a great way to sneak more veggies into your diet. I heated the cauli, added a dollop of yogurt, a scoop of protein powder, some cinnamon, blueberries and some PB. You should definitely try it out! .
Two similar looking dinners but very different...
The top is a “mini” adobo fried rice omelette. (Can you imagine how big a regular size is?). I ended up eating about half and the next day I went up in weight.
The bottom looks like fried rice but it’s caulisotto (risotto made from cauliflower rice). The serving size is the whole bag! (It’s the pre-made frozen kind that you can steam in the bag in the microwave.) I ate it all, including the serving of costco rotisserie chicken, and I was completely full and the next day was a weight loss day.
Healthy choices = MORE food.
Growing up Filipino I had rice & sausage as a meal all the time & it was one of my favorites. I decided to ketofy that meal with some kielbasa sausage & cauliflower rice. It’s amazing! I apologize for the lack of posts—I just got back from EDC LV & I had no phone service 90% of the time, but I’m back & keto-ing on! What’s your favorite ketofied meal? #keto#ketorecipes#ketodiet#ketosausage#cauliflowerrice
