Not the best picture, but in this week's edition of "I need to clean out the fridge and use this stuff up"... gluten free vegan spinach cheddar pizza on a cauliflower crust (and a blueberry cider)! Side note, that was almost an entire bag of spinach 🤦🏼♀️
Cauliflower crust pizza! Yum! 😋 Want to kick your sauce up a notch? Simply add in O N E drop of Young Livings Oregano Vitality Essential Oil, lightly stir and BAM, it’s that easy! 🍕
For a variation on this you can use instead a drop of Basil Vitality, Taste of Italy EO or any other flavor you’re feeling like! 🌱
Breakfast (NL): leftover hamburger with onion with some salads on the side.
Lunch (BE): Dr. Oetker cauliflower base pizza, I made it in a frying pan though since I don't have an oven.
Dinner: avocado risotto, 1 big portion or 2 smaller ones - > chop up 1 clove of garlic and a shallot, fry them untill they start to brown a bit. While you do that, solve a tablet of vegetable stock in 0,5L water (I used only half since my tablets are for 1L).
Add 250-300 grams of risotto rice to the frying pan and fry for about 2 minutes while occadionally stirring. Add a spoon of vegetable stock and wait for it to evaporate (also, while stirring for time to time), repeat untill there's no more stock. While the rice cooks, you take a bowl and mash up an avocado with a fork. Add some salt&pepper, lemon juice and I also added some soy milk to make it more creamy. When your rice is done, just transfer to a plate, add the avocado mixture and pinenuts. I also couldn't resist the parmesan in my fridge 😅
I like to put in a little more lemon juice then usual so it's both easier to mix up and it gives the avocado mixture (which doesn't have and awful lot of flavour) a bit of a boost.

Cauliflower Pizza Crust-
If you are pizza lover but your healthy lifestyle does not allow it, try this cauliflower pizza crust recipe.
For 2 pizza base-
1 cup cauliflower
1/2 cup semolina [ suji ]
to taste Salt, Black pepper
1 cheese cube small
1/2 cup Spinach finely chopped
1/2 tsp. Oregano
1/2 cup- Pizza Sauce
1/2 cup vegetables[ Capsicum, tomato, olive etc.]
1/2 cup grated mozzarella cheese
2 tsp. olive oil
To taste oregano, red chilli flakes.
How to Make-
1. Wash cauliflower carefully and keep in a strainer, drain all water.
2. Grate finely.
3. In a bowl Add grated cauliflower, semolina, grated cheese,herbs, salt and pepper, mix well and make a dough (without using water).
4. Line a baking tray with parchment paper. Brush with a little oil to help prevent the pizza from sticking.
5. Then use your hands to carefully, spread the dough into a circle, keep the crust 1/2-inch thick or slightly thicker.
6. Bake crust on 180 degree for 30 minutes till slightly golden.
7. Remove from oven and top with desired toppings.
1. Spread pizza sauce.
2. Add roughly chopped basil leaves.
3. Add vegetables and cover with cheese.
4. Pour olive oil over it and bake another 10 minutes or till cheese melt and toppings are tender.
5. Enjoy hot with any additional garnishes like oregano, chili flakes.
1.Dry cauliflower after washing, This is a very important step, so be sure to press out until no more water will come out. .
If there is water, heat a pan and spread cauliflawer and cook on low heat till water evaporate or transfer cauliflower to a clean dish towel and press out as much of the excess liquid as possible.
2. You can use any sauces or toppings of your choice, store bought pizza sauce or pesto sauce, fresh vegetable or sauté vegetables.

Because it’s cauliflower it’s healthy right?! I’m a little late to the party with this but had it tonight for dinner. Unfortunately this isn’t your traditional cauliflower crust as it has a ton of additives to the crust (brown rice flour, potato flour to name a few). Not super low calorie either with the whole pie being 760 calories. And I could have eaten the whole pie! (I didn’t, only 2/3...🤦🏽♀️). It is gluten free for our GF friends!
