In hormone receptor (ER/PR) negative tumours, which have less treatment options and often are more aggressive, the EPIC sub study showed a more significant reduction in risk of 35-59% based on the detection of the highest blood levels of certain carotenoids compared to the lowest.
The Institute of Medicine recommends women consume 3-6mg of b-carotene each day (equal to 1 cup mashed pumpkin) to reduce breast cancer risk. B-carotene is a type of carotenoid which are colourful pigments found only in plants (including orange, red and dark green vegetables) that provide cancer fighting antioxidants. -

Cooking tip: reduce the saturated fat content by omitting the coconut cream and replacing half the reduced fat coconut milk with 1 cup of veggie broth. Alternatively use almond or soy milk with coconut essence. Black rice is a whole grain and an excellent nutrient dense choice to go with this curry and it’s super tasty!
