Loving breakfast salads in Costa Rica. Do you eat salads for breakfast?

Its funny how when I shift into a hotter climate (it's hot AF here right now), I tend to lose my appetite.

Normally I'm a meat and fat fiend. I'll eat anything and everything that is put in front of me.

Today I ate my salad and a smoothie for lunch. Then "surfed" all afternoon. I say surfed in quotations because what I'm actually doing out there is mostly just survival and like my friend @hannah_chessman likes to say, "The ocean neti pot."

I had about 30 ocean neti pots today. Sinuses are totally clean!

Anyway, back to salads. I love them and yes, you can make friends with salads.

Spicy baked chicken wings came out super crispy, per usual. I like mine with a homemade dry rub, but the husband prefers to dowse it in Frank’s Redhot sauce. Served with a LOADED wedge salad, and topped with homemade blue cheese dressing. My macros are on point today, y’all.

Some positive news: have had my first functional medicine doc appointment, and am starting with the testing 👩‍🔬

The downside is that to assess the celiac situation, I need to have gluten for a week, to see how the body reacts 😫 Originally I’d heard this was a 3 week affair, but luckily it is less than a week for me.
.
The novelty of bread wore off after a few hours when the effects hit. Now I am fully looking forward to ‘normality’: only 3 days left. I really want to know for sure, so am doing it properly.
.
Dinner is 100% gluten free though 🤗 Fillet steak, with garlic sautéed asparagus. Simple but really quite the delight.

Another cupboard stable - Raw Health seed spread. Peanut butter is not allowed when battling candida which was a horrible prospect for me as I love it so much. But this seed spread is a great substitute and has the same consistency 👍

This morning for breakfast I made this veggie smoothie that actually isn’t half bad! It’s got: • handful of organic spinach • 1/4 organic cucumber • 10 fresh mint leaves • 1/4 avocado • squirt of lemon juice • 1 tablespoon chia seeds • coconut milk & water • ice cubes
〰️ I’m pretty impressed with how good this actually tastes considering it’s pure veggies!! I’m having this juice with a roasted sweet potato smothered in pumpkin seed butter, walnuts and hemp hearts 〰️

When we step out of the way, and live the way Nature intended us to, our body heals itself. Raw foods, primarily high water content fruits, are the foods that take the least energy to digest and give your body everything it needs in the perfect balance, to cleanse, nourish and regenerate the cells of your body. We were not created to be sick and unhealthy, we are meant to enjoy our lives to the fullest capacity, radiating health, vibrancy and joy! Something I learned was that you are best to either not drink anything with food till 30-30 mins after or drink something digestible like a juice or herbal tea. Water impairs digestion you see. If you are still dieting than tomorrow marks the beginning of week 3, you add two foods such as sweet potato and kefir if you had had it before and it didn't cause problems or something else. Nothing dairy otherwise. No beans either and no other fermented things. Also at this point increase your probiotic intake by taking a dose in the evening too. You should have felt some differences by now however small. Any questions?

Yesterday was the perfect day for a forest walk. Not too hot, not too cold, no wind, no human noise, only birdsong. This plus good footwear and fitness made it very mindful and therapeutic. Of course we should all do this more but for me, if any of the above conditions aren't right, I spend most of the walk thinking about when it will end. So don't force yourself if you ain't feeling it 🌳☀️

Shamefully it has been a while since I cooked up some internal organs. For some reason it feels like - mentally - it requires a bit more effort. I guess this is because I need to think a bit harder how I will cook them, what it will go with etc.

Here is chicken hearts with leek, bacon, coconut aminos, onions and various herbs to flavour. Other dishes that I make are pâté or mixed with beef into burger patties.

The taste is so rich too, that I need to find a way to keep incorporating in summer. I do have this mix on salads though! 😂 .. albeit not exactly a gourmet pairing.

Throwback to when I actually had energy from eating carbs...🙄
Today has been a huge struggle. I have zero energy and my body is just feeling drained. It is day 5 of eating low carb and I keep contemplating whether I should just give in, or keep going. When I was in middle school, I found out about the ‘Atkins Diet’. That diet was the start of yo-yo dieting for me and I began to believe that carbs were the enemy. I FINALLY changed my mind about this when I first looked into a plant based diet about 2 years ago and really enjoyed what I began eating. #allthecarbs
Now that I have to go back to something similar to what started so many issues... It is definitely a challenge. I just have to keep reminding myself that this is short term and hopefully I’ll feel much better soon. I do have to admit, my face has started to clear up. In this picture you can see there’s so many breakouts all over and it looks quite rashy- My skin is still far from perfect now, but it really seems to be improving.

I also thought I was just #teachertired since it’s testing time and we are close to the end of the school year. Umm no. I also gained a bunch of weight out of no where! Now I know why. I found out I’m allergic to baker’s yeast (via an allergy test). WHAT?! Who the heck is allergic to that?! Me 🙋🏽‍♀️🤦🏽‍♀️ At first I thought my life was over (dramatic much? Lol), but I soon realized it could be so much worse. Thank God for cousins...seriously! @healthyerdoc is my sounding board and she told me I’ve preparing myself to do this for the past few years. My other cousin, Roxy suggested some supplements. I’ve been doing my research the past few days and will be trying a whole bunch of new foods. Pray for me y’all! This shall be interesting lol

Took a little help from @realhomechef despite their inability to respond to customer inquiries.  Here's the changes that I made: 
1.  Tossed the spice rub and created my own instead. 
2. Ditched the mayo packets and used the rest of my homemade mayo.
3. Tossed the gochujang pepper paste and subbed chili garlic sauce.
4. Used my grain free @sietefoods
Coconut & cassava tortillas. 
The end result was delicious but I'm disappointed that after repeated emails and comments on social media I still had no answer about the ingredients and had to cook the meal before it went bad. Overall it was a good meal but next time it will be easier to make it on my own since I had to create and sub most of ingredients.

I may also be a bit cranky because week 6 has hit me hard and I'm craving all the sweets and having all the moods. Yay 🎉 😩

The coconut flavor really comes through and the crispy golden-brown tempeh sticks are reminiscent of my favorite (less healthy) fried foods.  The sweet aioli sauce makes a perfect accompaniment to this dish: so creamy and delicious, you wouldn’t even know it was vegan!  Tempeh is loaded with protein, and because it’s made from fermented soybeans, it is easier to digest than other plant proteins and may benefit gut health.  Pair with a big green salad for a delicious and perfectly balanced meal.

4. Try new things! A lot of us grew up on veggies in a can and most of them are GROSS. Try roasting brussels, fresh green beans, etc. Also, you aren't a kid anymore and our taste buds DO change. 🌿🍃🍑🍠🍆🍅
Once you start eating more veggies, your taste buds will change and your body will CRAVE them. Eating plain RAW veggies will taste so good and your whole body will thank you. Every weekend should not be a cheat weekend. Eventually eating the "treat meals" won't be worth it to you anymore. Listen to your body. My go-to skillet: @milkandeggscom red chard, mushrooms, and avo with whatever leftover protein I have in the fridge (ground buffalo here), topped with crunchy salt 😍 It always looks the same, but I make it taste a little different each day just by switching out the protein and using a different oil/fat to cook in! Sometimes coconut oil, sometimes ghee, sometimes duck fat, sometimes bison tallow, sometimes avocado oil.. and then I add different seasonings. Usually either oregano, rosemary, turmeric, ginger, or some combination of those. Simple swaps like that can make the same veggies taste totally different! Also, I need a moment to publicly acknowledge my deep love for Swiss chard, because I don’t talk about it enough. Swiss chard is not given enough credit in the world of greens, and it’s definitely make favorite sautéed green. I especially love the stems! I’m curious - what’s your go-to breakfast right now?? So celebrating a wedding anniversary doesn’t have to mean going out for lavish meals. To me it means eating what you really fancy and lovingly preparing it for my other half. I improvised a lovely zingy spring dish the other day - Just pluck some dandelion leaves and stinging nettles, add chopped tomato, garlic and bell pepper and grate a bit of lemon zest over it. Simmer until everything's almost soft with just enough vegetable broth, add coconut oil and put an egg on top with some salt and cayenne and fry with a lid on until the desired consistency is reached. For the salad I used lambs salad, sunflowerseeds, a pinch of minced ginger, olive oil, lemon juice and some daisies. Refreshing and a great treat for your liver and intestines! #CandidaDiet

This is lovely. Again using a combination of vegetables and spices, I added my very own chicken bone broth and served with chicken, salami and limes.
I don’t usually buy salami, because I chose not to eat pork very much but again - everything in moderation.

I made these delicious pancakes with only 3 ingredients: * gluten free oats * 2 free range eggs * 1 plantain (similar to banana) •

I also added cinnamon. They were absolutely delicious and the consistency is fluffy and light, no bloating, no stomach cramps, no crazy sugar high and low. Just healthy Whole Foods blended together. •

And yes of course this is a skin friendly food. I’m the skin coach after all 🥥😁😌

Following the candida diet, I eat the same things a lot of the time. I eat A LOT of kale, avocado and eggs for breakfast. It’s just how it is 🤷🏼‍♀️ when you’re working with a limited list of protocol-friendly foods, you gotta eat what sounds good to you and fortunately most of the time the same things sounds good to me so I’m not complaining! Anyone else go through phases where they eat the same thing for breakfast for days on end?

That said, the not-so-secret sauce for keeping the same ingredients fresh and interesting is: duh, seasonings. I’m totally guilty of just defaulting to the trifecta (salt, pepper, garlic) a lot of the time, but I decided to spice things up today (literally (lol)) 💃🏼

Sautéed kale in some avocado oil with s+p, sautéed some mushrooms in organic butter with s+p, smoked paprika and sundried tomatoes, fried eggs in bacon fat with s+p and smoked paprika, and of course some avocado with EBTBS 😍 ...and then doused everything in Franks red hot sauce 🔥👍🏼
