It’s the season of corn! For now, the corn we have isn’t local but still quite good. I can’t wait for N.J./PA corn though! Super easy to cook, just 2 minutes in my Instant Pot!
Then...I did this...
⭐️Preheat oven to 375
4 ears of cooked corn
4 tablespoons of Mayo
4 tablespoons of grated cheese, I used Parmesan
1 tablespoon of Tastefully Simple’s Mom’s Favorite Taco Seasoning
Slather 1 tablespoon of mayo over your corn. Coat it as best as possible, using a knife. Place corn on a foil-lined baking sheet. Sprinkle 1 tablespoon of cheese over top and then 1/4th of the taco seasoning
Bake for 15 minutes at 375
Carefully remove from tray, cool slightly and enjoy eating!

Kala Chana Chaat.
500 GMs Kala Chana soaked overnight in plenty of water
1 large onion chopped
8 large garlic chopped
8 Kashmiri chilies
1 Tbsp coriander seeds
1 Tbsp cumin seeds
1/2 cup curd
1 tsp salt
1 tsp baking soda
4-5 Tbsp tamarind paste
1/2 lemon juice
1 big tomato chopped
1 big onion chopped
1 cup coriander chopped
After the Chana has soaked overnight night, drain and keep it in a strainer. Dry toast the Kashmiri chillies, coriander and cumin seeds in a non stick pan till fragrant. Then grind, leaving it a bit coarse. Now in a big pan add some oil, then sauté the onions till golden, then add the garlic and stir for a minute more. Now add the ground Kashmiri powder, stir for a minute or so. Then add the drained Chana, cook further for two minutes. Add the curd and cook for two more minutes. Now add 5 cups of boiling water, the salt and now make the flame on low. Then add the baking soda. It will froth up and rise in the pan. Simply, keep stirring and it will all settle. Cover and cook for 1 hour and 40 minutes. Till the Chana is soft. Now add the
Tamarind and lemon cook till the water is nearly dry but make sure not to dry up completely. Now sprinkle the onions, tomatoes and coriander over the top and serve hot:))
