Aside from shirtless Ryan Gosling, sliced tomato + cream cheese has always been my kryptonite. I took @caseyhirsch homemade sourdough bread, toasted it til nice & crusty, and slathered some @kitehillfoods cream cheese on it. Slice up a ripe ass tomato, add some EVOO, cracked pepper & flaky sea salt. Oh, and wear some waterproof mascara... you may shed a tear.

You know when you’re eating something and you say to yourself “these must be fried 🤨 they are just too damn good!😋” Well friends... these Spicy Asian Brussel Sprouts are exactly that!!! Crispy, crunchy, charred and BAKED! Don’t believe me? 🤥 Watch me make them in my highlights, and I’ll prove it to you 😌✨
These little green gems will change your life 💥 💫⚡️ They’re sweet, spicy, savoury and totally addictive! 🤩 Make them tonight to accompany any protein you may be cooking! As always, if you make them, tag me!!! I love seeing what you guys make! 👩🏻‍🍳😘
You’ll need:
•	1 lbs. brussels sprouts •	1 tbsp grapeseed oil (or olive oil) •	3 tbsp soy sauce •	2 tbsp maple syrup •	2 tbsp fresh squeezed lemon juice •	1 garlic clove, minced •	1 tbsp Sriracha •	pinch of black pepper •	kosher salt

Let’s do this:
📌 preheat your oven to 400°.
📌Wash and dry your brussels sprouts very well.
📌Slice them in half and place them in a bowl. (**Very important to make sure your brussel sprouts are dry. This way the oil will stick and always result in major crispiness. 💡If you try to roast ANY vegetable that is not completely dry after washing, it will always come out soggy👎🏼)
📌 Place brussels sprouts in a bowl and add 1 tablespoon of olive oil or grapeseed oil, a pinch of kosher salt and a touch of a pepper. Shake them around to coat.
📌 Cover a rimmed baking sheet with parchment paper. Transfer sprouts to baking sheet and roast in the oven for 35 minutes.
📌During the last five minutes of roasting, mix soy sauce, maple syrup, lemon juice, garlic and sriracha in a small saucepan over med-high heat and heat until sauce reduces in size and thickens like a syrup (5 mins).
📌Transfer sprouts to a bowl, and drizzle with some of the reduced sauce. (Do this a little at a time as you don’t want the brussels to be soaked in sauce so they retain their crispiness).
📌Done and done ✅ Enjoy 😉 😘 .

From a young age my kids have been helping prepare family meals. This is not something I forced, but rather encouraged based on their interests and desires. There are so so many benefits for getting kids involved in food prep from a young age, from learning where Food comes from, maths and problem solving when following a recipe, science experiments in baking, learning the joy of making food with love and of course an extra pair of hands to save time!! A late and slightly monochrome dinner but a really good one: tofu marinated in almond butter and tamari dressing then baked, collard greens lightly sautéed with lemon, garlic and a bit of olive oil and super good spicy coconut and sambal potatoes from @hellolisalin, topped with that one scallion that’s been lurking in the back of my fridge .

This simply amazing stir fry and shrimp dumpling dish was made last night within the perfect time. All ingredients here are from @traderjoes 🤗. This dish was topped off with their sriracha sauce also and some soy sauce. Trying to get the BEST picture last night was a bit difficult and being a Virgo while dealing with “perfectionist” made posting an UN-perfect picture even worse LOL; BUT because this food was so delicious I thought that I would share it with you all.

This 20 minute pasta dish nailed it!

1 box @eatbanza noodles
2 cups frozen peas
2 cups roasted cubed sweet potatoes
@simplyorganicfoods pesto
Grated cheese, optional

Add a bit of olive oil to a cast iron skillet. Add in peas and sweet potatoes. Cook until slightly crispy. Meanwhile cook pasta and once done add to peas and sweet potatoes. Add pesto sauce and mix well. Top with cheese and serve.

Pizza night came early! Tried out @traderjoes cauliflower crust pizza that I’ve seen mostly terrible reviews of.... 💁🏻‍♀️ I actually liked it! I think the key is getting it crispy and adding plenty of flavorful toppings! It held together just fine and the cauliflower was barely detectable except in the edges. I didn’t mind the texture at all! I baked mine as instructed but used a preheated pizza stone which probably helped a lot. I ate 1/2 the crust (7*) topped with pizza sauce (1), turkey pepperoni (1), garlic, basil, and @traderjoes lite mozzarella (2). 11sp **Most if the ingredients are 0sp but the WW app is calculating points based solely on the nutritional data- it doesn’t know that most of the crust is 0sp soooo 7sp seems a little steep to me. Just my opinion. 😉 Either way I’ll definitely be eating this again! .

Our attempt at lemon poppyseed keto muffins + blueberry muffins. The blueberry ones came out perfect. The lemon ones need some work. I added the zest + juice of one lemon, but the lemon flavor was way too subtle. I think I need to add a cream cheese swirl + more lemon next time. That’s the fun part of cooking/baking; experimenting to find the perfect balance of flavors. Especially if you have dietary restrictions. 🤙🏼

it’s been awhile since i’ve looked forward to the future. i’ve been struggling between finding my purpose asap & just allowing myself to be happy with where i’m at currently. i know the man upstairs has my back all the time, but ya know, don’t you just wish sometimes He would throw you a sign or two just to be sure you’re headed in the right direction? 
well, i guess that’s the funny thing. because no matter what direction you’re going, God is always leading you down His path planned for you. no two paths are the same, and no one path is better than someone else’s. my path is my own unique story, & one day i’ll look back & wonder why i spent so much time worrying about not getting to where i want to be fast enough. then again, i’ll never be where i want to be, because i’ll finally get to what i thought i was meant for, & i’ll say “that’s it? i can do more.” & i’ll set out on my next “where i want to be.” & if you’re feeling stuck, that’s okay. maybe you’re meant to be “stuck” right now, because God’s preparing you for something much, much bigger & better than you will have ever imagined. 💕 ••• feeling thankful for many new opportunities coming up that will get me closer to my one of many “where i want to be”-‘s. •••

This week has been crazy busy and FLOWN by! Sorry I’ve been a little MIA, but meals have been simple and #keto. Still going strong! I’ve gotten a ton of questions about how I’m balancing WW with Keto, what percentage of Fat/Protein/Carbs I’m taking it, etc. So I figured I’d answer those all in one post! Daily points I’ve been using (been right around 30-33 each day) with my nutrient %  My Targets are 75% Fat, 20% Protein, and 5% Carbs (net carbs=Carbs-Fiber) I’m not perfect everyday as in exactly at 75/20/5, but I’m happy with my results thus far and I’m feeling amazing! Lunch today was just a Quest bar so I made a little 2 SmartPoint sandwich to hold me over until dinner! I love that Weight Watchers has taught me portion control. In the past I would have used two slices of bread and way more cheese and mayo than necessary. This is perfect to curb my hunger and stay within my daily points allowance!

~ burger recipe: 1 lb of organic ground turkey or ground beef (I've tried this recipe on both and works great), 1 egg, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 1/2 yellow onion, minced, 2 cloves of garlic, minced, s + p. mix ingredients in a bowl and use your hands!! it works so much better! then form into patties. heat a pan with oil and place in the pan 2-3 inches apart. make a dimple with your thumb in the center of the patty to prevent it from puffing up while cooking. I used a top to help cook the patties quicker but cook to your preference! I did about 6-7 minutes on each side on medium high heat! top with your favs! I used feta cheese here. enjoy! ~

SELF LOVE SHOULD BE UNCONDITIONAL •
Woah. My last cycle was a TOUGH one. The time between ovulation & my period dragged on for weeks & was wracked with unusually inconsistent mood, energy, appetite, comfort, sanity 😏. After all the work i put into taking care of myself, the less than desirable results irritated me & made me feel frustrated with my body & my choices. •
If I was coaching client through a similar situation, I would encourage patience, compassion & a little bit of extra self care. But when it comes to my own life I am not always good about practicing what I preach as a health coach. So, in addition to making it clear that I still have work to do with balancing my hormones, this past cycle also made it clear that I have A LOT of work to do with accepting my body as it changes & making peace with variables I can’t control. •
Self love & body acceptance shouldn’t be conditional. We can’t only be nice to ourselves when we’re looking our best or functioning optimally. We should love, accept, nourish, honor our bodies even when they’re imperfect or presenting challenges. That’s when we need to love em the most! So next time I’m not feeling like a rockstar, or not looking like I did when I was 28 & hangry, I’m going to try to remember that my body & I deserve unconditional love just like any other creature. I’m going to try my damndest to practice what i preach & love this #misfitwellness mess unconditionally. What do you say, will you try it too?

I know that huge bowls of salads with lots of delicious ingredients can look swoon-worthy.😍 ESPECIALLY on IG. and believe me, I've also been known to fall prey to the LETS PUT EVERYTHING IN THE FRIDGE IN THIS SALAD BOWL! mentality. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
But recently, I've been opting for simple salads with fewer ingredients. eating meals with less ingredients makes it easier for your body to break down and digest properly. this can reduce bloat, supports your immune system, and aids in inflammation. PLUS! I find that I can taste and appreciate each ingredient more. 👍

This sauce was so delicious and extremely easy to make! We just took a good quality, sugar free, organic tomato basil sauce and added in some fresh garlic and chili flakes. We let that cook together for a bit and then added it to a blender with about 10 raw cashews and a sprinkle of nutritional yeast and BAM 💥 magic . Slightly spicy, a little creamy and absolutely delectable! We used our favorite @cappellos grain free, gluten free fettuccine and sautéed some criminis in a little bit of avocado oil to top it all off. So if you’re looking for something easy and yummy to make, this is the way to go. 
Today, we woke up lateeee, well we woke up early and then late. Anyways, we started our day later than planned but that’s okay! There’s still room to be productive in a late start. We’re heading to the gym soon and Roberts going to be working on editing our new vlog the rest of the day we’ll be figuring out as we go 😊
