Good breading is crucial to good Tonkatsu -- pat down with just enough force, and you'll achieve a Tonkatsu breading that never falls apart, thus locking in the natural juices of the meat and ensuring that the final product is scrumptious. But, do it wrongly, and the breading will split from the meat after the cooking is done. ⠀
