Greetings from Salzburg! 🇦🇹 It’s definitely been a minute, I’ve been so busy traveling that I haven’t had time to cook 😞. But I finally found some down time and more importantly, a KITCHEN so I had the opportunity to cook for my loved ones tonight ☺️.
Tonight I made a simple spaghetti bolognese! 🍝The trick to a good sauce? Simple ingredients & red wine 🍷, buy an extra bottle- one to cook with & the other to drink with ofcourse 😏. I used to think my sauces had to be super complex but want to know what the key and most priceless ingredient is?? ❤️ (hehe sorry for the xtra cheese today)
Sauce Bolognese and 3 DIFFERENT WAYS TO #EAT IT.
I always cook the same dish for the whole family. My daughter loves eating with us and I do not want her to feel different.
The #gluten free diet taught me a lot about what and how we eat. My #family had always been a healthy one but obviously since the need for extra careful food handling became a necessity I am trying to make my life as a " family #cook " as easy as possible in these circumstances. If you have a dish that your family love, make the most of it. For us it is the humble bolongese. So much better home made than from a jar!! Easy to make and always handy from the freezer for a quick meal. The sauce itself takes up to an hour to cook. If you are going to spend some time in the kitchen make sure you will have lots of leftovers for the next day or week to give yourself a breathing space from the kitchen life.
My philosophy is - Cooking in bulks makes life easier!!!!!!!!! Cooking and preparation time around 60 min
Ingredients ( for about 6 portions depending on how you are going to use it)
2 tablespoons vegetable oil
1 large onion chopped
1 large carrot shredded
500g lean mince beef
2 cloves of garlic minced
2 cans of chopped tomatoes
250- 300 mil passata
250 mil water
a pinch of salt and black pepper, half a teaspoon of dry basil, 1 bay leave
1- Add the oil to a large saucepan heat it up and brown the beef.
2- Add the carrots, garlic and onions and fry gently for another 5 minutes.
3- Pour in tomatoes, passata, water and add all the spices. Bring to boil cover with a lid and simmer on a low heat for about 50 min. The longer you simmer the dish the better it tastes. You can always add a bit more water if the sauce gets to thick. Check for seasoning at the end.
1- Traditional way with pasta.
2- Courgette pasta - To make nice thin ribbons of pasta out of this vegetable I use potato peeler. I would say one middle size courgette per adult. Put prepared ribbons in a boiling, salty water for about 2 min and drain like pasta.
