Sometimes I have weeks in grad school 📚that really s(mac)k 👋🏼 all the energy and sparkle ✨ out of me. This was one of those weeks... I used to find happiness at the bottom of @wholefoods mac and cheese bar 😛 (and then suffer the consequences bc I’m lactose intolerant 🐄). Had some leftover bbq jackfruit that I threw on top of @annieshomegrown vegan mac (which is, dare I say, BETTER than kraft spirals 🧀) and called it a successful 10 min dinner 👍🏼

BBQ Jackfruit

• 2 Cans of @traderjoes Jackfruit
• 2 TBS of Brown Sugar
• 1 TSP of Smoked Paprika
• 1 TSP of Garlic Powder
• 1/4 TSP of Cayenne
• 1 TSP of Turmeric
• Pinch of Salt and Pepper
• 1 Cup of BBQ Sauce

• Drain, rinse, and cut jackfruit (I cut the hard core out, you can leave it if you’re hardcore..) • Mix together everything except BBQ sauce, then toss jackfruit in with spice mix • Place jackfruit in pan on medium heat with 1 TBS of oil, and sauté for 3 min • Add BBQ sauce and 1 cup of water, reduce to simmer, cover, and cook for 40 min •

♥️ W A T E R M E L O N cure ♥️ regret something you did recently? I DO! So, been discussing with various people about bivalve mollusks (scallops, clams, muscles etc). Some vegans eat them on the basis that they don't have a central nervous system - like plants, don't feel pain - like plants. Well. A couple of days ago, whilst on the beachfront in a lovely restaurant in Catalonia, I decided to try some razor clams and see how I feel about it!! GOOD OR BAD DECISION??

Joel and E had some too, Sofia didn't want any. WELL! Day before yesterday at the airport we all started dropping like flies, terrible vomiting and dizziness 🤮🤢 The plane ride home was horrible, as was the car journey home. Yesterday we were all been suffering and eating plain food- this monomeal of watermelon for me, and plain rice for dinner. The watermelon in my @coconutbowls tasted so nice and fresh and ground me back to my plant life!! Thankfully today we're on the mend, bit still a little ropey. Ah well, lesson learnt!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

🍕VEGAN PIT-ZA NIGHT! Pita bread makes an awesome base for pizza if you dont have dough readily available. Highly reccommend :) Homemade pizza is so quick to put together & so much healthier because you get to choose EXACTLY what you want on it (no hidden additives)!!

Prehead oven to 350 degrees. Assemble pita bread & toppings. Throw in the oven for ~10 minutes. Sprinkle on some onion powder and red pepper flakes & DIG IN 😋🍽!!! Have a good night ya’ll💕

sweet dEATS: preheat oven to 400 degrees. wash and cut up sweet potatoes to desired size. place sweet potatoes in a gallon size ziploc bag. add olive oil & seasonings to bag (for these I used Himalayan sea salt, ground black pepper, & garlic powder, but adjust seasonings to what YOU like)! zip bag and shake to coat the fries evenly (add more olive oil or seasoning if needed). place fries on a parchment lined baking sheet, so they’re not touching. bake for about 25 minutes or until desired level of crispiness 😋

I'm super mega deficient in both IRON and D-VITAMIN it turns out😱 Went to have my levels checked because I finally just felt that something is so WRONG, and it was. So next thing to do: I'm going to ask for a gastroscopy to check my intestines and the possibility of celiac disease. This has been on the agenda for YEARS, but since I already avoid gluten, but have it occasionally, a blood test will not tell yes/no. I've felt that I don't have the time to feel sick, which I do when I have loads of gluten. But now I've just had enough. Bring me the gluten, I'll overdose, and then we can once and for all get to the bottom (hehe) with this! Oh, and all the weird rashes I've had?? Found a diagnosis that is linked to celiac disease, a skin condition often mistaken to be ezcema, but is really a symptom of the celiac disease. It's easier to follow a 100% glutenfree protocol if I know for sure that I'm allergic to it. -

Ingredients:
16 large eggs, beaten (be careful not to beat too much)
1 1/2 lb ground venison (or turkey or lean grass fed beef)
2 tbsp avocado oil
1 yellow onion, diced
1 green bell pepper, diced
3 green onions, finely sliced
1 can (14 oz) artichoke hearts, chopped
2 cups (packed) fresh baby spinach, plus extra for the top
1 tsp chili powder
1/2 tsp cumin (may need more spice per taste)
1/2 tsp oregano
salt and pepper
Freshly grated Parmesan cheese (omit for dairy free)

Directions:
Preheat your oven to 375° F.
Heat the oil in a sauté pan on medium heat. Add the onion and bell pepper and give it a quick stir. Add the meat and use a large spoon to break it up.
Add the spices, salt and pepper and stir to combine everything. Cook for approximately 10 minutes, or until there’s no liquid in the pan and the meat is cooked through and browned.
Add the spinach to the meat mixture and stir for 1-2 minutes or until the spinach just starts to wilt.
Transfer the meat to a 9×13-inch casserole dish and evenly cover the bottom. Top with the artichoke hearts and beaten eggs. Optional: you can add some cheese at this stage.
Sprinkle the green onion and a handful of spinach on top.
Cook the casserole in the oven for 40-45 minutes, or until cooked through.
Before serving, garnish with parmesan cheese (optional) and an extra sprinkle of pepper.
