Beef bone broth is one of the most healing foods you can consume. It’s rich in nutrients like geletin and glycine, which helps heal your gut and improve your skin.
4 pounds beef bones with marrow
4 carrots, chopped
4 celery stalks, chopped
2 medium onions, peel on, sliced in half lengthwise and quartered
4 garlic cloves, peel on and smashed
1 teaspoon kosher salt
1 teaspoon whole peppercorns
2 bay leaves
3 sprigs fresh thyme
5-6 sprigs parsley
¼ cup apple cider vinegar
18-20 cups cold water
HOW TO MAKE IT:
Place all ingredients in a 10 quart capacity crock-pot.
Add in water.
Bring to a boil over high heat; reduce and simmer gently, skimming the fat that rises to the surface occasionally.
Simmer for 24-48 hours.
Remove from heat and allow to cool slightly.
Discard solids and strain remainder in a bowl through a colander. Let stock cool to room temperature, cover and chill.
Use within a week or freeze up to 3 months.
I stopped to say hello and show my support for the slaughterhouse vigil up the road from me today. This place kills cows, a large amount are exhausted and no longer useful dairy cows. Yup, dairy is scary people!
The group were so friendly, peaceful and kind, and I will try and build the courage to stand there too. It's a powerful thing looking into an animals eyes just before it's killed, for no other reason that human greed. 😪
Most of my local friends and neighbours probably don't even realise this place is for killing...that's what they want though. If slaughterhouses had glass walls- would you be a part of the killing?

Lets talk meatloaf. Sounds easy, right? Not really. Keto meatloaf requires a bit more effort, otherwise you just end up with a fancy hamburger patty. Fancy hamburger patty doesn’t sound so bad BUT it’s not meatloaf. I wanted meatloaf. So I started with my old non-keto recipe and made some changes. This is the result and it was divine. I used cheddar cheese and crushed pork rinds to replace bread crumbs and I used to cover it in bbq sauce but instead I used tomato paste mixed with spices to cut the sugar. I made mini loaves and wrapped a piece of bacon around the loaf to add a pop of extra flavor.
