I woke up this morning feeling slimmer than I have in a long time, and thought I would snap a quick pic. I may not have a 6 pack but I will take those obliques!!! And thought it would compare my end of 80 day pics to now and VERY happy to see I have made progress since! I sure have been working hard with this latest program and about to switch up again.
BUT - it really comes down to nutrition, and losing a whopping 12 pounds!!! in 2 weeks is definitely letting my hard work show! I am so freaking loving this amazing new nutrition plan! When your husband is giving you a back massage 💆 and you need to show him that your face is filled with appreciation...you take a pic... I know, I look beautiful, lol. You guys - everyone is going crazy about this new nutrition plan. And yes - you read that right. I am down NINE AND A HALF POUNDS IN SIX DAYS. And I am EATING LOL. In fact, I have gone out to dinner twice, gone to a BBQ, and had 3 margaritas in that time frame. A pretty strange week for me, actually, but it makes my results even crazier.

So...I’m doing this new thing...and I’m kind of freaked out. Portion controlled clean eating has been my way of eating for 3 years and I find it to be really easy.
But last year, after I got to my goal weight, I lost my mojo. I’ve been up and down since then, on and off nutrition wise, really all over the place. And my body is just ready for something new, I think, so I’m taking a leap on an all new nutrition plan. Sometimes, it’s good to be out of your comfort zone... So...what is drawing me to this? 🍅No counting calories, measuring, no containers - Calorie counting drives me crazy...always has - because there is so much room for error! Even with nutrition labels, the margin of error between what we eat and the calories can be up to 20%! How can you be exact when the information is only 80% correct??? 🍆No cutting food groups! No offense to you keto-ites, but I can tell you from both of the times I did keto, I have never felt so physically awful. It’s not for me, but not only that, in my heart of hearts, I just don’t think it makes sense to cut out foods that our bodies were made to eat...always exceptions but... 🥑No deprivation or feeling hungry - AHHHHHH - this is huge for me. I hate being hungry! I get hangry - I just can’t do it! I MUST feel full and satisfied to deal with life! 🥦And no fasting! Guys - I have done intermittent fasting, I’ve done a 3 day water fast (the worst 3 days of my life), all it made me think of was “WHEN DO I GET TO EAT IT AGAIN??” I don’t want to feel like that!! 🥒And something that can be followed ALL OF THE TIME - parties, vacation, going out... THIS ONE IS HUGE! This is my downfall. The thing is I am REALLY good at being strict. I’m also REALLY good at completely falling off the wagon. That has been my “balance” for the last 3 years, and I really just want to try a different approach. I want to never feel like I cheated because nothing is off limits... And that is what this is!!! Aaahhhhhhhhh.... I never sleep in! I’m sure most of you never sleeping in. I wake up at 4:30 during the week, and on the weekends usually around 6, or even earlier if we have something going on, so that I can get my workout in first. I pretty much always wake up with my kids...I figure my husband needs the sleep.
But today I asked for him to get up and stayed in bed FOREVER and it was so lovely. Can I do this every day????? 🙏

I am not a great taker of things...I have vitamins that I randomly remember to take...I have allergy meds that I forget to take constantly and remember the minute I leave the house and realize my head is going to explode....so I don’t feel confident in my abilities to take something else...but I feel like I should lol. LIKE A BOSS!! That’s my #littleawkward over on the right side. You know, the one COMPLETELY STILL and not moving, having a complete #survivor movement! She has been so impressing me in gymnastics! I’m not saying she is going to be a world class gymnast 🤸♀️ but the girl has some strength and a crazy high bridge.... Here is the thing...I grew up doing ZERO activity. The closest I came to doing a sport was marching band 🎷 (which definitely had its cardio moments and was hella fun, so don’t knock my band geekiness!). I was overweight, #awkward and assumed I had zero athletic ability - and I think I subconsciously was thinking that she would be the same. But I guess that is the great thing about having kids, we can hope they turn out better hahaha.

#tbt day! I’m throwing this WWWAAAYYYY back to last Sunday 😬😬😬 when I got to workout with @autumncalabrese and get my pic taken with her and @cwellsfusc and a bunch of people I don’t know 🤣🤣🤣. Working out with a trainer that you see on your screen at home every single day is such a surreal experience. It isn’t even about the workout, more so the energy...it’s this shared experience you have been sharing every day virtually with thousands of people and all of the sudden you are in a room with them all and they are all your people and have been doing exactly what you’ve been doing, but they are total strangers...it’s weird, lol. Weird and exciting and it filled me up!
I drove 2 hours each way to do this event - totally worth it. What would you drive 4 hours to do that fills you up?
Let’s all just take one minute and look at that adorable elephant’s face....that girl has only gotten sweeter over the last 7 years - love her!
And moving on....I haven’t done a #transformationtuesday in awhile. But lately I have been feeling a bit grumpy about my body, wishing it could be a certain way, not feeling like it responds as I want it to, as it does for OTHER people...blah blah blah.... But when I look at that happy mommy on the left, who was so uncomfortable during this photo shoot and hated these pics of herself, I am pretty sure that lady would tell me to SHUT THE F UP! Because for the pounds I’ve lost, I have gained equal amounts of strength, both physical and mental. I have gained courage, and willpower, and knowledge. I have gained endurance and flexibility. I have done things that I didn’t know where in the realm of possibility in my life. I have shaped my body in ways I didn’t know I could. I have a lot to celebrate! So the grumpies need to GO.

When I was completely plant based last year, we used meatless crumbles in tacos. They were good, but towards the end of the year, I just felt like I was eating SO much processed food...it just didn’t make me feel good in my heart of hearts...So now, moving back to a mostly plant based lifestyle, I’m trying to keep processed to a minimum when I can, and these were perfectly meat taco-y without coming from a bag! You guys...I am truly rarely tempted by “off plan” food when I’m in the zone. I don’t really have cravings, and you can eat just about anything in front of me without me caring or thinking I’m missing out. This, my friends, is called a refeed day COMPLETE AND UTTER FAIL!!!! You may remember that I was going to make chocolate covered peanut butter that were clean (in lieu of finding one that used cauliflower 🤣)...welp....here they are in all their glory! 🙈🙈🙈
Not balls you say? Correct. So you are supposed to make the balls, stick a toothpick in each, refrigerate them, then dip them in chocolate. Well...as soon as I put the toothpick in them, they disintegrated. So, ever the resourceful chef 👩🍳, I decided to just press it all down, pour PB over it, and make it into squares. Totally sounds like it would work right??? Well...then we went to cut it....and as you can see, that went really well 😒. AND I we were supposed to use dark chocolate and I used 100% cacao...so BASICALLY...no sugar baking chocolate.... Mr. Awkward had a taste and...well, he said it was a bit bitter which was probably the nicest thing he could come up with... I’m just going to call this a fail and move on. Did y’all see this on my story? I know, I am the queen of awkward combinations...but I swear all of my food yesterday was SOOOO good!!! My favorite was: spaghetti squash with buffalo tofu, udon noodles, fresh basil, and a little bit of EVOO. I didn’t know buffalo and basil would taste so good together but I swear they did!
First day back to a full day of #plantbased eating. I’m planning to eat mainly #plantbased with some egg and fish mixed in for Phase 3 of my program to see how my body feels. It was starting to yell at me with all the meat.

Be prepared...I wasn’t a Brownie for very long, so it clearly took me way too long to learn this lesson. I’ve never been much for meal prep. But the nutrition on this program is so precise - having to eat certain food groups together FORCES you to really think about what you are going to eat. And I decided to throw ANOTHER wrench into the mix moving back to mostly plant based this phase. That really threw me for a mental loop because I now have DIFFERENT food combinations to work with. Well, I am proud to say I REALLY prepped this week (more than I ever have EVER) and I THINK this week should be pretty smooth sailing nutrition wise... Another refeed day in my program, and I seriously DO need to stay calm!!! My last was 2 weeks ago and I have to say, I didn’t love it! It takes a lot of planning, I have to make food I don’t normally eat, and last time I was really hungry all day (discuss....does that even sound right???) and the next day VERY sleepy...SO we’ll see how today goes. I’ll keep up with my refeed fun on my story though! The food IS good...just not filling to my “GIVE ME ALL THE WHOLE FOODS BRAIN!” Just to catch you up, in case you are curious, the refeed day gives me extra carbs (this is a modified refeed day, and it is very controlled, it’s not s cheat day) and I get to eat “dirty” yellows that are more processed and higher in sugar. This was real life yesterday, so had to share.
I really like pancakes. NEVER eat them...really like them. Every clean recipe I have seen for them requires protein powder which I don’t want to waste in my pancakes, or you just get one little pancakes. Um, sorry, WHAT IS THE POINT??? WHO WANTS JUST ONE FOUR INCH PANCAKE??? Aaaaannnyyywwaaayyy, someone in our 80 day test group posted this recipe, and I thought I would try it. Um - HOLY SHNIKES IT WAS AWESOME! And you can’t even see the SIX pancakes sitting under here, but yes, 6!!! This is going to become a weekend staple!
Butternut squash pancakes:
1 cup cooked butternut squash
1/4 cup dry rolled oats
1/2 tsp vanilla extract
1/2 tsp cinammon
1 tsp coconut oil or nut butter
Blend with blender (or just stir, I did...). Preheat griddle and spray with coconut or EVO oil. Pour 1/4 cup for each pancake. Makes 6-8 pancakes for 1 SERVING!!! Eat them up!! I topped mine with berries (obviously). ❤️💚💛 🥄
