Grilled Swordfish with Avocado Pesto
While the grill heats up pat draw swordfish, season with olive oil, lemon, salt and water. Let the fish marinate for 10-20 minutes ⌚. Meanwhile immersion blend a handful of basil, a splash of olive oil, juice from a lemon, 2 tbsp of pinenuts, salt and pepper, and half an avocado. Grill swordfish, roughly 3 minutes per side. Topped grilled Swordfish with avocado pesto. 🐟
Enjoyed Spaghetti squash with homemade avocado “pesto” sauce, chicken sausage, and roasted broccoli and mushrooms on this beautiful evening! Dinner was chickpea pasta with an avocado broccoli pesto! While the broccoli didn’t blend down as much as I wanted it to, the pesto was still really delicious and I will totally make it again. This week I’ve decided to eat vegan and this dinner was a really tasty start to it. (Besides my blueberry spirulina smoothie bowl for breakfast). While I’m not vegan, I do enjoy eating and cooking vegan food a lot so going (eating) vegan for a week is not that hard for me. It is also makes me feel really energized and good about myself. I’m also trying to go on more walks, as today I went on a 4.5 mike walk and then baked some vegan pitaya blueberry choc chip muffins! Add about a 1/2 cup bunch of cilantro and 1/2 of basil 🌿, 2 small avocados/ 1 big one, 2 garlic cloves, 2 tbsp of raw pine nuts, the juice of a lemon 🍋, a little drizzle of olive oil, salt to taste & water- enough for your desired thickness..

Finally made my avocado and spinach pesto sauce with vegetable pasta. And I finally measured the ingredients. Woo hoo! Avocado Spinach Pesto:
1 avocado 8 oz fresh spinach 2 garlic cloves 2 1/2 tbsp olive oil 2 tbsp pignoli nuts 2 tbsp grated pecorino cheese sea salt and black pepper to taste. Mix in food processor and blend with pasta of choice. Top off with more pecorino cheese or maybe some feta. Yum😁
