In desperate need of some greenery today after touring Brixton’s wine bar scene last night - particular thanks to @salon_brixton for the free wine tasting!
Lunch: Grilled Norfolk asparagus, charred fennel, steamed purple + red potatoes, rocket and a creamy lemon garlic hemp dressing.
I have to admit, I wasn’t too sure whether the hemp dressing would work but actually the earthiness of the hemp goes beautifully with the buttery potatoes, spicy rocket and charred greens.
Hemp dressing: 1/2 cup hemp hearts, 1/2 cup water, juice of 1x lemon, 1/4 of a French onion stock cube, 1x garlic clove + salt whizzed in a blender.
Green and white asparagus with ‘løjrom’ and dill. We served this tasty green and white dish for @andtradition, NDC and @birgerchristensen this week. Unfortunately the asparagus season is short. It is over in the end of June, when the soil starts to dry out in the fields, and new asparagus are planted for next year’s season. It is a long time to wait, but it is always worth it.
