We’ve been on the “hunt” for another plant based protein option for our menu. Such an awesome array of options here at the show — thanks to @impossible_foods @thejackfruitco @beyondmeat for the delicious NOMs! Raise your hand if you’re ready for potato protein, coconut oil, jackfruit, and pea protein 🖐!
Pork belly with rice and veggie coconut milk curry.
1️⃣ marinate your pork belly in bulgogi sauce for at least a few hours. Boil it for at least an hour, or put in pressure cooker for 20 mins.
2️⃣in the meantime cut up pan steam with lid on and then once water is evaporated sauté some veggies. I used eggplant, red/green onion, oyster mushrooms, zucchini, red pepper, red chili pepper, green twister pepper and ginger. Also added an organic Thai green curry paste.
3️⃣also in the meantime start cooking the rice.
4️⃣once veggies are cooked add in a can of coconut milk
5️⃣place the pork belly in the oven on broil and cook till slightly crispy.
6️⃣put it all together and enjoy!
