My garden is producing so much more arugula than I can eat right now!! I looked up some recipes on Pinterest and this beet-avocado-arugula salad caught my eye. I added kalamata olives for a little saltiness. I have to admit, it didn't convert my taste buds... Maybe something fruity with pears and oranges next time 🍊🍐
