I’m using my sweet potatoes ( yes I’m addicted to them) as toast replacement with my breakfast. This gluten-free toast is incredibly tasty and as I’ve shown you on my previous post how insanely easy it is to make. .
The possibilities are endless. Use your creativity to create some amazing toppings. You can even spread your favorite nut butter. It’s so tasty and satisfying, and best of all it’s packed with nutrients and did I mention gluten-free!

So, in honor of the celebration, I present to you #mopaneworms as made by @zambiankitchen. Not sure that my fellow Southern Africans would place it in the “exotic” category as these are a delicacy in countries such as Zimbabwe 🇿🇼, Zambia 🇿🇲 and South Africa 🇿🇦. .
Gram for gram these beauties (often served dried vs fresh) provide more protein than chicken. Also, they are a wonderful, yet rare source of animal fiber. Yes, these babies can clean your gut out like fruits and vegetables!!!!
