Home cooked Tuscan food made with soul and love. Doesn’t get much better than that 👌🏽 1. Pasta with artichoke and leeks 2. Fresh cut tomato salad with homemade tuscan bread croutons 3. Spaghetti, the sauce is made from carrots, onions, celery, and of course tomato. Also has some garlic and basil. The basil was fresh picked from the aromatic herb garden. Of course have to add some of the olive oil made here on the farm in the little silver spout. 4. Strawberries with coconut sugar and lemon juice. 5. Homemade hummus with tuscan bread 6. Gnocchi with basil and walnut pesto (we cracked the walnuts) 7. Polenta with mushrooms and bell peppers 8. Pasta al fungi 9. Rice with rice milk curry and garlic spinach 10. Farro macaroni with tomato and eggplant (not pictured, we fried the leftover polenta as a side dish). I’m in serious danger of becoming a food snob after this experience. Marina, my host, proved you can cook simple, cheap, quick, satisfying healthy vegan meals. All things I needed to learn. I’m horrible at getting myself to cook but so inspired after this to try to buy locally and cook simple, quick meals for myself. Marina showed me you don’t need faux meats or junky vegan food to be satisfied. You can eat very well, very simply and you can do it cheap and quickly. Cauliflower Alfredo for dinner tonight! 👩🏼🌾 Or should I say...Cauliflower Victoria. 👩🏼🍳😏😂 I made the sauce by blending (frozen PC) boiled cauliflower, olive oil, apple cider vinegar, cashew milk, and nutritional yeast with salt and pepper. This was already so tasty but then I topped it with ground black pepper and sautéed mushrooms and garlic. 😍 I’m also dying because it kind of looks like mashed potatoes 😂😂😂 Ah well. I will definitely be making this again which is funny because I was never into white cream pastas before I went vegan! 💁🏼♀️🌱

Telur Bungkus Pasta Sayur (melimpah)
Tekstur pasta bentuk shell ni kenyal-kenyal. Jadi tak payah nak letak daging cincang atau ayam. Jangan lupa rebus & tos dulu pasta tu.
Tekstur timun jepun tu memang crunchy. Kebetulan ada jagung.. masukkan aje.

1 genggam Mixed Vege Shell Pasta (direbus dulu)
1 genggam timun jepun dipotong dadu
2 sudu isi jagung manis (boleh guna yg segar atau frozen)
3 ulas bawang merah (ditumbuk)
2 ulas bawang putih (ditumbuk)
1 sudu cili boh
Sedikit sos tomato
Garam & gula.
2 biji telur (dimasak menjadi telur dadar)
Tumis bawang-bawang + cili + sos tomato sos.
Masukkan shell pasta + timun + jagung.
Perisakan dengan garam + gula sesedapnya.
Goreng sebentar saja.
Di kuali/pan lain, buat telur dadar yg lebar.
Letakkan pasta yg telah digoreng tadi di tengah-tengah telur dadar.
Lipat telur macam murtabak (atau nasi goreng pataya) supaya pasta terbungkus rapi.
Terbalikkan bungkusan telur-pasta supaya lipatan berada dibawah.
Siap untuk santapan.
