Dinner tonight was:
🔸Harira soup, courtesy of my baby sister Nour (she’s not a baby anymore 😢, but can’t help but call her that)
🔸rice and koftas
We ended up eating nothing 😕 which means leftovers for tomorrow 😃😁
Here’s my Kofta recipe 👇🏻
🔸what you need to make it:
▫️500g finely minced beef
▫️50g minced fat
▫️2 cloves of garlic
▫️1 medium sized onion
▫️1 chilli pepper
▫️1/2 tsp cinnamon
▫️1/2 tsp allspice
▫️1/2 tsp black pepper
▫️1/4 tsp cloves
▫️1 tsp salt (or less, according to taste)
▫️1/4 tsp paprika
🔸how to make it:
▫️chop your parsley and onion, chilli pepper finely and put your garlic in a garlic press, or alternatively put in food processor and pulse until smooth. Be careful not to over pulse as you’ll be left with a watery result😟
▫️add all ingredients together and mix well
▫️form the mix into whatever shape you prefer
▫️to cook, sear on high heat, then lower heat to medium flame until cooked. Make sure to oil your pan well.
▫️serve on a bed of rice or with pita bread and hummus .
Had prepared hummus a few days ago and thought might as well serve them with the Koftas. We actually ended up eating them with bread and the rice remained untouched 🤭
So my advice to you, serve it with pita bread in Ramadan, it’s lighter to eat that way 😍
“The Good Bean” Chili Lime Chickpeas —
You probably get a quick drive-by of faint lime chili flavors. Lacks real flavor. Basically, eating salted chickpeas to me... Thought I’d try them because they had a flashy, cute, petite packaging. Think I’m going to stick to “Saffron Road”. Their chickpeas are, for sure, flavored as what they’re advertised to be.
I worked for a Greek guy years ago in a restaurant that I grew up going to on Friday night's. Spinach pie (spanikopita) was one of the top sellers. I've never made it but getting out of my comfort zone and giving you comfort foods is my weekly goal.
