One word to describe #superheromuffins from #runfasteatslow cookbook by @shalaneflanagan & @elysekopecky ..... AMAZING!!!!!! And, the best part?.... so incredibly easy to make!!!!! Oh, this is definitely going to be a regular in my house hold!!! The second best part?.... my 9-year-old son gave the thumbs up!! (Shhhh, he doesn’t need to know they are healthy 😉) if you haven’t, you need to buy this book and give the superhero muffins a try!!!

The result? A "PB&J Beets All" Smoothie with French Toast Dipping Sticks! 😍🥜🍇🍞 What an amazing post run meal!!! This baby contains a serving of vegetables, 2 1/2 of fruit, 2 grain servings and 2 servings of healthy fats (not to mention the 25g of protein!). These components basically make up a deconstructed peanut butter and jelly sandwich, but better!!! The recipe is provided below⬇️ Enjoy!_
PB&J Beets All Smoothie
•1 cup frozen mixed berries
•1/2 frozen banana
•1 scoop vanilla protein powder
•2 Tbsp creamy peanut butter
•1/2 cup almond milk
I used @fitfoodiefinds French Toast Sticks recipe to quickly transform my whole wheat burger buns into these delectable beauts!
how many times have you said, “I want to eat healthy, but it’s soooo expensive!” Yes eating healthy OUT at fastreal food places (I see you, @sweetgreen) can quickly become even more expensive than your coffee habit! Planning ahead can alleviate a lot of the costs of healthy on the go. Whip up this 2 min beet hummus, use it on sandwiches, as salad dressing, or as a snack with your fav veggies.
2 cans chickpeas
1 can roasted beets
1 heaping tbsp tahini
2 tbsp oil of your choice (I mix sesame and olive oil!)
1/2 clove garlic
Fresh chopped basil
1. Throw everything but the second can of chickpeas and basil in a food processor.
2. Stir in the second can of chickpeas
3. Top with basil!
It really IS that easy! Today is not the day to make excuses. Today is the first day of the rest of your life!

I’m stocking up food for ~ 7 consecutive weeks on the trail & I’m already tired of oats! If you have a favourite trail snack, please let me know - I’m in desperate need of diversity! I wish I could eat eggs and nachos every day, but eggs are too perishable and chips are too bulky for the long haul. 😬

We made Garden Gazpacho from #RunFastEatSlow and it is delicious! Next time we’ll take some of the jalapeño seeds out before blending, but this soup is perfect for hot weather. 👌🏼🍅🥒🍏 @natalie_cooks this recipe is AMAZING! #gardengazpacho

👉I started off with a toasted bun then spread on some creamy garlic tahini, yes that’s right tahini sauce 😉 Layered on my BBQ jackfruit, which I baked in the oven for that extra pizzazz 👌 Finished off with shredded carrots, dill, green cabbage, & red cabbage! How’s that for eating the rainbow? 🌈🍔
My little man is 8 months old today. Time flies when you’re exhausted and in love! Celebrated with his first taste of Superhero Muffin. I made a baby friendly version without nuts or raisins, and sweetened with banana. Mostly he just smashed it into a thousand pieces. ❤️
Ok so I’m making this hummus 👆🏼and the food processor is on & I’m JAMMIN’ to Headband by B.o.B.🎶 I assumed I had the house to myself for a while, so I’m straight up getting into it. & ya know how there are just some lyrics in a song you just HAVE to yell? (Duh) Just as I’m confidently (or obnoxiously, who can really say?¿) singing/rapping/yelling “DROP THAT ASS DOWN, NOW LOOK BACK AT IT” my dad walks in. 🤦🏽♀️ My face turned the color of this hummus. 😳 Being home for the summer shall continue to provide stories for your entertainment I’m sure. •

Afternoon well spent testing some recipes from Shalane Flanagan’s Run Fast Eat Slow Cookbook. Carrot and ginger soup was delicious, but nothing beats the whole house smelling of these delicious and healthy muffins 😋

Had this delicious fartlek chili from run fast eat slow yesterday! I’m a big fan of crock pot recipes, and this was really easy to make! As a side note, I have to admit, even at 28, I cant say the word fartlek with a straight face 😂😂
The most AMAZING wrap EVER (trust me). #runfasteatslow Beet hummus, avocado, yellow bell pepper, mixed greens, tofu cooked with turmeric, salt and pepper, drizzled with lemon tahini sauce on a whole wheat wrap.
The beauty of having older kids is that they can go to the park and enjoy the day playing with friends so mom can have some peace and quiet to do some meal prepping! Quinoa recovery salad and superhero muffins baking in the oven. #runfasteatslow 😋
Guess who got a waffle maker?!? MEEE 👋 Of course I had to make pink waffles! I used beet root powder in the batter & topped this beauty with maple syrup, a strawberry coulis & a sprinkle of hemp seeds! 💕🎉😛

Had to make my favorite quinoa-based #RecoverySalad from @shalaneflanagan and @elysekopecky ‘s Run Fast Eat Slow cookbook for dinner tonight. 🙌🏼 I vary the recipe depending on what I have on-hand (like garbanzo beans instead of black beans tonight) and topped it with a hard boiled egg, avocado, peptitas, feta cheese + a sprinkle of @traderjoes nutritional yeast. #sotasty
As pointed out in the recipe, quinoa is the perfect post-hard workout recovery food as it’s the only plant food containing all nine essential amino acids necessary to repair sore muscles. 💪🏼 And I love adding nutritional yeast to meals as it’s vegetarian, has a cheesy flavor + is full of B vitamins, which help us convert food into fuel to energize our bodies. Soooo good + good for you!

Meal preppin! These jems just came out of the oven. Made the #runfasteatslow spelt banana bread into mini superhero muffins. I’m obsessed with my new @oxo muffin tin because I can cook 24 kid-size muffins in one swoop. Beets and sweet potatoes now going into the oven. Wild rice is in the #instantpot . Now I’m working on chopping the veggies for the #runfasteatslow wild rice salad and making a beef-sweet potato-bone broth baby food purée.
After a REALLY long tough 5 week stretch we finally have a day to just run and rest!! Celebrating with a #cantbeatmesmoothy from #runfasteatslow by @shalaneflanagan ..... Except this is a more "adult" version ;-). Just as healthy though!! Maybe she'll add it to her next book ;-). #owlmasonjar
