It’s really difficult to describe how good it actually was. You’d have to try it for yourself. For a broth so clear I was amazed at how much flavor and umami they were able to infuse into it.
Homemade „Maze Soba“ or „Abura soba“ (served with store bought chinese noodles though - please don‘t blame me). It is a special kind of Ramen, which is normally served with proper Ramen noodles, of course, but without a soup base. Instead there is a sauce on the buttom of the bowl - just like with Chinese „Dan Dan Noodles“. You mix sauce and toppings until you get an even coat on the noodles. First time I saw this dish in a post by @livfleischhacker - since then I needed to make this at home. Luckily I found a recipe by @ramenover for a relatively simple version. The „base“ or sauce was made by mixing Tahini paste with soy sauce, black vinegar and homemade Chinese Chili oil. On top egg yolk with „pork saboro“, which is made by adding soy sauce, Mirin, sugar, sake and Miso paste to minced pork. Other toppings are coriander, scallions, Katsuoboshi shavings, sliced Nori, minced raw garlic and Shichimi Togarashi. When mixed, you get a super rich, creamy and savory sauce full of umami flavors with a little acidity - through the Chili oil also rather spicy. This version was extremely delicious - super satisfying and so aromatic! Next time I only need to add more liquid to the sauce ... and I definitely need to upgrade the noodles to proper Ramen noodles for the real deal. #ramen#homecooking#mazesoba#japanesefood#berlinfood
