Chef Pedro Alaniz, the Nantucket Hotel's Executive Chef, has found a recipe for success: combine equal parts faith and determination. "If I hadn't gone through hardship, I wouldn't have gotten so far," he says, reflecting on the journey that led to from Mexico to Pebble Beach to Dubai, and recently, to Nantucket.
Chef Pedro originally hails from Jalisco, Mexico. "Our house was small," he says, of the two bedrooms shared between 11 siblings, "but we made the best of it. We were happy." The Alaniz family raised pigs and cattle, so there was always meat, fresh cheese, and milk. "Money was scarce, but I never remember being hungry." Struggles within his parent's marriage meant that by the time he was 15, Alaniz crossed the border to Encinitas, California in search of agricultural work. While camping in a temporary shelter on the bluffs, he began building a life that would take him to some of the country's, and the world's, finest restaurants.
In those early days, Alaniz worked in a flower shop, and in landscaping and construction. It was while working as an agricultural worker that he received his Green Card in 1986. He got a job at The Lodge at Pebble Beach as a dishwasher, and went to school to learn English in his off hours. After just three months, Alaniz was promoted to line cook. Later, Alaniz worked as apprentice to Chef Bradley Jones and learned pastry and baking with Chef Ricardo Murillo.
