Steak Salad with Chimichurri
-4oz. Grapefruit Marinated Skirt Steak from previous post, sliced
-1 Radish, sliced
-2 Cups Spinach
-½ Cup Red Cabbage, shredded
-¼ cup Cilantro, chopped
-¼ cup Parsley, chopped
-1 tbsp. Fresh Oregano, chopped
-3 Large Garlic Cloves, minced
-½ cup Olive Oil
-Crushed Red Pepper
-Sea Salt Salt
-Limes for serving
Whisk your cilantro, parsley, oregano, garlic, and olive oil together. Season with crushed red pepper and salt to taste
Assemble your salad, add chimichurri, sprinkle with lime juce and enjoy!
So this weekend didn’t quite go to plan.... 😑
Burning the candles at both ends. As much as I am an advocate to find your work life balance I am human and I have the tendency to get sooo passionate with my work and life in general!! At times I like to go from 0-100 Haha so I’m still learning how to reel it back when I need to 😂🏃🏼♀️😅
But the world and my body certainly woke me back up this weekend 💥 I had grand plans and didn’t achieve a single one! I literally spent the whole time sleeping, eating small amounts when I could stomach them, watching tv when I could, and basically between my bed and couch... which I know sounds phenom! BUT when it’s a choice it’s incredible when you’re forced it’s not 💔
Whilst I know I don’t ‘look sick’... I cannot explain the struggle and mental battle it is, struggling though CFS. It can be so frustrating to be loving your life one minute and next minute you’re unable to move from the couch, in pain, unable to watch tv because it gives you a migraine, unable to read or look at your phone, unable to chat to the person next to you, all you can do is sit... in your thoughts. But your ego can take over and say things like “you don’t even look sick, get up”, “don’t be lazy”, “keep pushing you’ll be right” which in itself is the most draining and exhausting part. 🤯😩
I haven’t spoken much of my journey mainly because when it’s bad it’s bad and I don’t like to think about it when times are good - can you blame me. BUT I think it’s important to share today not only to show I’m still learning and make mistakes, push too hard at times, this is not a cry for help but to show awareness and hopefully slow someone else down who is on the verge of burnout 🙌🏼🙌🏼
We are told to constantly push and hustle all day erryday but in reality no one is made to do this. So don’t feel that you cannot slow down when you need!
Learn to rest when tired not quit 👏🏼 .
I’m very grateful for family friends who understand when I cancel plans last minute or cannot reply to texts especially this weekend! .
