Ready? Set, BRUNCH. Make this zucchini egg nest in just a couple of minutes. 
1/2 zucchini
1 slice bacon
1 egg
1/2 tbsp Parmesan
Pepper to taste. •
Cut up your bacon and fry it in the pan. After a couple minutes, add your zoodles and parmesan to the pan. Let them cook for 2-3 minutes; then create a little indent and drop your egg into it. Put the lid on the pan so the top of the egg cooks faster. Sprinkle with pepper and dig in! 
Calories: 137. Net Carbs: 3g | Fat: 9g | Protein: 11g

Well I also like to give my IG followers special recipes that aren’t on my blog so lucky you: here’s my recipe for decadent vegan treats that are literally the yummiest coffee or tea accompaniment ever. For Breakfast, teatime or dessert: these cookies are magical 🦄🌈 And also, not my healthiest #plantbased creation but one of the tastiest!

Maiah’s Chocolate Spice Cookies
 Yields 2 to 3 dozen depending on size

Ingredients:
Cookies:
1/2 cup olive or avocado oil
1/4 cup pure maple syrup
3/4 cup organic raw sugar
3 tbsp nondairy milk
1 tsp pure vanilla extract
1/2 tsp almond extract
1-2/3 cup gluten-free flour (I used @bobsredmill)
1/2 cup cacao or cocoa powder
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp cayenne pepper (add a pinch extra if you like spicy things)

Optional topping (omit for healthier/less sweet): 1/4 cup organic raw cane sugar
3/4 tsp cinnamon

Directions:
1. Heat oven to 350F and line cookie sheets w/ parchment paper.
2. Whisk wet ingredients, sift in dry. Roll into little cookie balls, roll into topping if desired, press into flat disc and space cookies out a couple inches from each other. 
3. Bake for 10 min or until they are spread a little and crackly on top. Let cool on wire rack to firm up then enjoy!! Lasts 4-5 days in airtight container at room temp.

This Olive Oil Orange Cloud Cake 🍊☁️ was baked by me but the recipe belongs to my good friend Dona @ladygbakes who developed this recipe in March when she was a guest blogger.

I made this cake with oranges grown in my backyard. 
I still need to practice the process of folding egg whites into batter, think I over mixed it but with practice I'll nail it next time 👊

Tastewise it is wonderfully delicious. Soft, delicate and sweet with the flavoring of the zest of a whole orange and it's juice 🍊

I made these hoisin salmon skewers and they were delish!
Sure, my older daughter still insisted that she hates fish and wouldn’t even try them 😡 but my younger girl loved them and so did my husband..and he usually complains about eating salmon! As I predicted, the fish stuck to the grill even though I oiled and sprayed the grates, plus put lots of oil in the marinade. Oh well! Still tasted amazing 👍
All I did was toss salmon pieces, scallions, and asparagus with hoisin, soy, garlic, and sesame oil, then threaded it all on skewers.
10 mins later, dinner was served! Making this again most definitely 🔥

Ich liebe es zu kochen und Neues auszuprobieren. Heute habe ich inspiriert von @hellofreshde das Gericht Gnocci in Tomatensauce nach gekocht. Dazu habe ich noch ein wenig Mozzarella aufgeschnitten und ein Topping aus Schnittlauch, Basilikum und Wallnüssen gemacht. Und hat es super lecker geschmeckt. Tipp: Bratet die Gnocci, die Konsistenz ist dann viel fester und knackiger 😁

Tonight’s dins after a meat filled weekend is a veg packed, hearty vegan pasta dish. This was inspired by @deliciouslyella with a few tweaks along the way!

72 hours off social media was a really interesting experiment over Easter! Don’t get me wrong, I did check Instagram on the odd occasion, just to be nosey!! However, I realised how much I mindlessly check my phone on a regular basis without any real need to! I felt a weird sense of freedom, not having my phone on me, not thinking about posting things, and as a result, it made me appreciate my time with the family much more and gave me more time to procrastinate in different ways! (Something I’m very good at doing!!)

I’m not a social media addict by any means but it has made me more aware of trying not to rely on my phone as much and maybe consider leaving it behind now and again, to focus my attention on other things sometimes

Anyway, here’s the recipe for tonight’s vegan meal

Sauce ingredients:
- 150g cashews soaked in water for 3hrs
- 200g Acorn or butternut squash
- 2tsp nutritional yeast
- 3tsp tamari
- 1tbsp tahini
- 1/2 tsp cayenne pepper
- 1 large lemon juiced
- Salt and pepper to season

Pasta and veg ingredients
- 100g frozen peas and edamame beans - 2x garlic cloves
- 200g chestnut mushrooms
- 200g washed spinach - Gluten free pasta

To make the sauce:
- Steam the squash for 15 minutes or until soft and peel off the skin
- In a blender add the cooked squash, drained soaked cashew nuts and all of the sauce ingredients with 200mls water and blend until smooth. Set aside.

Meanwhile;
- Put the pasta onto boil
- Sauté the garlic and mushrooms in a pan, then add the peas and spinach at the end to heat through.
- Drain the pasta
- Add the veg to the pasta then spoon in the sauce until the desired amount is combined.
- Serve with a side salad 👍🏻
