Every now and then I promise to share a recipe then totally space. Oops. Well I also like to give my IG followers special recipes that aren’t on my blog so lucky you: here’s my recipe for decadent vegan treats that are literally the yummiest coffee or tea accompaniment ever. For Breakfast, teatime or dessert: these cookies are magical 🦄🌈 And also, not my healthiest #plantbased creation but one of the tastiest!
Maiah’s Chocolate Spice Cookies
Yields 2 to 3 dozen depending on size
1/2 cup olive or avocado oil
1/4 cup pure maple syrup
3/4 cup organic raw sugar
3 tbsp nondairy milk
1 tsp pure vanilla extract
1/2 tsp almond extract
1-2/3 cup gluten-free flour (I used @bobsredmill)
1/2 cup cacao or cocoa powder
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp cayenne pepper (add a pinch extra if you like spicy things)
Optional topping (omit for healthier/less sweet): 1/4 cup organic raw cane sugar
3/4 tsp cinnamon
1. Heat oven to 350F and line cookie sheets w/ parchment paper.
2. Whisk wet ingredients, sift in dry. Roll into little cookie balls, roll into topping if desired, press into flat disc and space cookies out a couple inches from each other.
3. Bake for 10 min or until they are spread a little and crackly on top. Let cool on wire rack to firm up then enjoy!! Lasts 4-5 days in airtight container at room temp.
My family gave me a pleasant surprise for my bday @itsshuhmyrah pulled a rabbit out the hat and the boys were specific that they wanted to go jumping for my birthday at 35? 🤷🏽♂️ needless to say I hurt my whole left side smh I’m grateful for my birthday! #getthestrap

Burger for one please 🍔 Nicole still doesn’t have her appetite back fully so I thought I would try out @strawberryfieldsbali and see what all the fuss was about 🧐 The verdict? SO GOOD! Yes that is a mac n cheese ball on top of the bun 😍 The Le Big Mac is a double patty and cheese with ‘Big Mac’ sauce and it tasted great! The menu is huge catering for everyone; from loaded fries and freak shakes, to vegan burgers and avo on toast 🥑 Definitely check them out for yourselves if you’re in the Seminyak area!
Another week whizzes 🏃🏽♀️ by!! Which means it’s time to share some of your delicious meals again! 🙌🏻! There’s so much here!...THANK YOU! i’ve gone for slightly more comfort food this week, maybe it’s the weather? It’s turned on us down here! 🤷🏻♀️...but think creamy orzo dishes, risottos and rice dishes (either as a meal in itself or as an accompaniment to tasty curries!! 😋😋) The slight change in weather has definitely got me craving all the comfort!

WHAT YOU COOKING THIS WEEKEND?? The weekend can be a great opportunity to try new recipes, flavours, ingredients, and prep for the week ahead! If you have a tasty meal waiting for you, rather than a warm sad salad, you are far less likely to diverge to the less healthful things.

- I like to look at what I have in my fridge or cupboard, type these random ingredients into google to see what comes up, so I am using up what I’ve got! I then adjust the recipes to my liking.

Ich liebe es zu kochen und Neues auszuprobieren. Heute habe ich inspiriert von @hellofreshde das Gericht Gnocci in Tomatensauce nach gekocht. Dazu habe ich noch ein wenig Mozzarella aufgeschnitten und ein Topping aus Schnittlauch, Basilikum und Wallnüssen gemacht. Und hat es super lecker geschmeckt. Tipp: Bratet die Gnocci, die Konsistenz ist dann viel fester und knackiger 😁
På fredagar är man ju sällan sugen på att ställa sig i köket en längre tid, då passar tortilla pizzan riktigt bra!! De gäller bara att ha roliga toppings som i detta fall va 👉Pizza 1 fullkorns tortilla, créme fraische, päron, chevre, rosmarin, valnötter och honung. Pizza 2 fullkorns tortilla, créme fraisch, mozzarella, tryffel salami, rucola, parmesan och tryffelolja. Till detta ett glas rött eller varför inte ett iskallt krispigt vitt?! Frozen mango, frozen pineapple, coconut water, lemon juice & a little turmeric 🍋🍍🥥 the super vitamin C and anti-inflammatory smoothie ⭐️
Baby squid ink barley with sheep cheese. So rich (from the squids), creamy, and sweet (from the cheese). The @winery_rizman Pošip 2016 delivers a quintessential varietal bouquet and Dalmatian sun-powered body: ripe and minerally.
Sardines with almond flakes, vinaigrette onion, and rock samphire (sea fennel). Fried, crispy prawns with garlic crisps. Love the prawns which taste like a couch-moment snack. The sardines get a savory and ‘deeper’ twist with the onion slices.
Beef carpaccio with zucchini, aromatized sea salt and mustard. The wine pairing is wondrous. Maraština lends a honey flavor (goes well with the smooth mustard), ripe melon-like sweetness and lemon-tone freshness (on the finish) to the dish.
Tonight’s dins after a meat filled weekend is a veg packed, hearty vegan pasta dish. This was inspired by @deliciouslyella with a few tweaks along the way!
72 hours off social media was a really interesting experiment over Easter! Don’t get me wrong, I did check Instagram on the odd occasion, just to be nosey!! However, I realised how much I mindlessly check my phone on a regular basis without any real need to! I felt a weird sense of freedom, not having my phone on me, not thinking about posting things, and as a result, it made me appreciate my time with the family much more and gave me more time to procrastinate in different ways! (Something I’m very good at doing!!)
I’m not a social media addict by any means but it has made me more aware of trying not to rely on my phone as much and maybe consider leaving it behind now and again, to focus my attention on other things sometimes
Why not give it a go one weekend and see how you feel!
Anyway, here’s the recipe for tonight’s vegan meal
- 150g cashews soaked in water for 3hrs
- 200g Acorn or butternut squash
- 2tsp nutritional yeast
- 3tsp tamari
- 1tbsp tahini
- 1/2 tsp cayenne pepper
- 1 large lemon juiced
- Salt and pepper to season
Pasta and veg ingredients
- 100g frozen peas and edamame beans - 2x garlic cloves
- 200g chestnut mushrooms
- 200g washed spinach - Gluten free pasta
To make the sauce:
- Steam the squash for 15 minutes or until soft and peel off the skin
- In a blender add the cooked squash, drained soaked cashew nuts and all of the sauce ingredients with 200mls water and blend until smooth. Set aside.
- Put the pasta onto boil
- Sauté the garlic and mushrooms in a pan, then add the peas and spinach at the end to heat through.
- Drain the pasta
- Add the veg to the pasta then spoon in the sauce until the desired amount is combined.
- Serve with a side salad 👍🏻
