The new low carb bread recipe we found on Facebook thanks to ‘low carb experiences with a Type 1 kid’ was great! Highly recommend giving it a go. .
1 cup almond flour
1/3 cup cashew nuts (freshly grounded)
1/3 cup chia seeds
1/3 cup sunflower seeds (freshly grounded)
1/3 cup sesame seeds
1/3 cup flax seeds (freshly grounded)
1/3 cup pumpkin seeds (freshly grounded)
2 tablespoons psyllium husk (16 gr)
1/2 teaspoon xanthan gum
1/2 cup natural yogurt
1 cup water
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon baking soda
1 teaspoon sea salt
Mix eggs well. Mix yogurt, baking soda and lemon juice well and add it to the eggs, add water. Blend all the dry ingredients in a separate bowl and add it to the egg-yogurt mix. Blend it well until well combined. Wait for 5 minutes until all the liquid is absorbed. Bake at 175 C for 55-60 minutes.

I'm so tired. I just cooked lunch for Monday-Friday and dinner for Monday-Wednesday for Dustin and me. 😅
But, I feel so satisfied knowing that we will have delicious, healthy meals on hand.
One of the main issues most people have with eating well is just lack of preparation. 🌱🌱🌱
Making these meals was really time consuming and exhausting. But, for the next three days, Im going to have zero cooking and zero kitchen clean up to do.
I made all of this in the span of a few hours, so I just rinsed and reused my pots and pans. Then, at the end just one big clean up, and I'm set. 😬
This is my first time prepping this much food at once, so I'm just testing this out. I love cooking dinner, but some days when I get home, I'm just ready to eat and relax.
