Black bean and sweet potato enchiladas with a big ass salad. Almost entirely plantbased (just drop the cheese or exchange for vegan cheese), five portions of veg, and packed with protein. What isn’t to love?
My make ahead blueberry protein muffins got slightly warped in the oven 😂 they’re soooo yummy (I had a sneaky piece when I tried to separate them all as they became conjoined in the oven lol). Halved the measurements in the recipe as I had no idea what I was going to do with 12 cupcakes. What a day!! You runners did an amazing job today, well done to everyone. It was a dam hot day, much hotter than last year! Seen some of our crew cruise by, missed some others, but I know you’ll mash this!! C2 meal prepping! I want to be on point this cycle so I’m trying to prep as much as possible. Gorgeous weather both days. Friday breakfast of chicken cashew curry (it needed eating!), snack nuts en route to a training session on data protection, cold salad of lemon pork with feta and boccoli for lunch, evening HIIT in 24° with mac n cheese to refuel. 💪
Saturday was morning HIIT (pic), mac n cheese for breakfast, an all-day wrestle outside in the sun with washing lines, washing machines and drains resulting in some unwanted bodily pinkage, more chicken cashew curry for lunch, and dinner out with friends at Naturally Chinese in Surbiton which requires a whole new paragraph to list the food that accidentally fell in my mouth! 😍
Bear in mind this is all certified gluten free: deep fried squid, deep fried soft shell crab, chinese pork spring rolls, lemon chicken, fried rice noodles with beansprouts, and egg fried rice. HEAVEN! 💙
Can't believe I've done it! The time has passed by so quickly and I've loved it! Gonna continue my journey though, still got a tummy I wanna get rid of (and still got my final workout 5 from C3 to smash🤢). I'm so proud of myself and I recommend this plan to everyone!
