The peloton are still riding around the Friuli-Venezia Giulia for stage 15 of the Giro. The riders will go from Tolmezzo to Sappada over a 176km course. To start with tonight I made Salviade (fried sage leaves) with San Daniele prosciutto, paired with Pinot Grigio from Friuli-Venezia Giulia @annandalecellars_veno. This was followed by Paparòt, which in the native dialect of Friuli means ‘pulped’. This is a soup of spinach and polenta. Then Guanciale di manzo con cumino, or beef cheeks with cumin.
To finish is Crespelle. A panfried batter, thicker than the French crepe, and according to what is said in ‘La Cucina’ the people of Trieste are pretty adamant that it not be confused with the ‘pompous name crepes’. Crespelles are larger and thicker than crepes. As with a lot of popular italian dishes, this is cucina povera or food of the poor consisting just flour and eggs.
